Authentic German Potato Salad
I've never made German Potato Salad in my life but, I was asked to bring some to a family gathering and this was the easiest recipe I found on AllRecipes---what a hit!! Everyone raved about it, two people asked for the recipe and it was all gone by the end of the party! The only change I made (to cut down on fat) was using Turkey Bacon -- but, since Turkey Bacon doesn't throw off any fat, I used about 2 TBSPs of canola oil to fry the bacon in and then had enough left to saute the onions. It was great! I might also cut down on the sugar just a tad the next time.

Cola Pork Chops
I was plesantly surprised at how good this sauce was! I took other reviewers advice and seasoned some flour (salt, pepper, Italian seasoning) and then coated the boneless loin chops with the flour. Then I browned the chops for about 8 minutes in olive oil. I used some spray cooking oil in the baking dish (highly recomended or the sauce will take forever to clean up from the baking dish!) and put about half of a Mayan Sweet onion that I had sliced up on top of the chops before adding the sauce. The chops cooked in less than 30 minutes and the combination of the onions with the sauce was terrific. Will definately use again!

Artichoke and Spinach Swirls
Based on other reviewers raves, I tried this one and found it to be very BLAH! I used phyllo dough instead of puff pastry however so, that may account for some of the problem although another reviewer had commented that they used phyllo dough and it was fine. I'll try it again but will definately add some garlic powder, perhaps salt and whatever else I can think of to "perk it up".
