Forever Fresh Cookies

Kids, wife, coworkers and I all loved this one! You can substitue applesauce for 1/2 the oil and oatmeal for the coconut flakes, and rasin bran for the cornflakes. Healthy cookies! Doesn't get better than this!

Lemon Sauce I

Shepherd's Pie VI

I've never had mashed carrots, but they add nice flavor and color. I added peas and carrots (the picture looks like they did too), but this is one you can throw all the appropriate leftovers into!

Bran Muffins I

I substituted 2c shredded apples for the shortening and only used 2c sugar and 1c brown sugar and added some cinnamon and nutmeg. The recipe is great - very moist. For my 4c bran cereal, I used Uncle Sam flax cereal (inexpensive at WalMart and high in Omega 3 and 7g of fiber per serving).
