Clark's Quiche

Really hearty and very good. This is the first time I made a quiche and I am very pleased with the results. I did pre-cook the pie crusts for 10 minutes so they would not get soggy and used canned mushrooms (squeezed dry). I also used shredded swiss and cheddar/motz mix cheese, I probably did not use all that was called for because the crusts were filling up. Cooked perfectly in 40 minutes- very tasty.

Banana Oatmeal Cookies I

I was looking for a sort of breakfast cookie for on the go and this one was great. I did some changes as other mentioned- 1/2 cup brown sugar, 1/2 cup white sugar, 1/2 cup margarine, 1/2 cup of applesauce, no cloves but added a shake of pumpkin pie spice and a little nutmeg along with the cinnamon, 1 cup choc. chips, and 2/3 cup mini choc. chips. These are very much like muffin tops or cake so we called them "cakies" instead of cookies. Give them a try.

Amish White Bread

Wonderful and easy. I make this every fall, so the house smells great. If it is chilly in the house or you're worried about the rising- boil some water then pour it into a 9x13 pan and place it in the bottom of your oven. Then place the bowl of dough on a higher rack and close the door. Works every time. This bread will be eaten very very quickly- it's that good.

Banana Oatmeal Cookies III

I loved these- My son has dairy allergies so I am always looking for something with no butter. I love bananas and these were very flavorful and my son loved them too. With the fruit and oats- we use them as breakfast cookies.

Chicken Breasts Pierre

This is my husbands favorite dish. Don't be scared by the long list of ingredients, I have found that I will measure out and put all of the dry ingredients in an airtight bowl and the wet in another early in the morning. When it comes time to cook- just open and pour, it saves a lot of time. I have also made this like a fried chicken breast with the sauce on the side. My husband likes this better because the chicken stays crunchy. Just make the sauce in a small pan and let it simmer for 20 minutes. I have served it with jasmine rice and egg noodles- both were great. This dish has such a unique and delicious flavor.
