Sarah's Banana Bread Muffins
this is an amazing recipe! followed some other's suggestions to use 1/2 cup brown sugar and 1/4 cup white sugar. also added some cinnamon and a bit of nutmeg. before baking, i sprinkled a little homemade streusel mix on top (brown sugar, quick oats, flour, butter). they turned out delicious, and they look great, too!

Simple Scones
perfect! super easy and quick to make and tastes great. i added the zest of 1 small orange and 1 cup craisins to make cranberry-orange scones. next time i'll try them as chocolate chip scones. can't wait!

Mexican Casserole
this recipe is more like a topping for nachos or the filling for burritos or tacos. the taste was good, just didn't do it for me as a casserole.
