About this Cook
I worked for an internationally known food company for 7 years in food safety and product development. I have a BS in Nutrition. I currently am a stay at home mom and cook for the household. I am sad to say that I don't have the ability to "whip up something fast" and entertain and wow a crowd. Right now I am just working on a recipe box of quick and easy meals that my young children will eat and my husband will enjoy.
My favorite things to cook
I love to cook anything easy that the family will eat and enjoy. I am always supplementing meals with fresh fruits and vegetables, just what everyone needs this day and age.
My favorite family cooking traditions
I grew up loving hot meals, including pot roast in the crock pot, meat loaf, and steaks which my dad unfortunately would cook well-done.
My cooking triumphs
It wasn't until I was an adult that I realized that the best steaks are medium-rare. I was happy to entertain my boss (from the food company) in my home with an awesome steak and baked potato meal.
My cooking tragedies
While working at the food company, we had a vegan sister company that shared some of their products, including tofu pups. I took some home and was determined to cook with them. I couldn't eat them plain, they didn't taste right. So I made a casserole with macaroni, cheese, corn, and chopped tofu pups. It was the worst thing ever! To this day my husband teases me about the "Tofu Pup Casserole".

Minute(R) Rice Lasagna
I found a favorite, tasty and easy recipe! I had leftover rice in the fridge to use (not instant) and it worked great, too. I was worried that the recipe might lack in flavor, so I substituted one large clove crushed garlic and added 1/3 cup chopped onion, and it definitely did not lack in flavor. I also used the sour cream substitution of the cottage cheese, and that worked well for me, too. Great idea for making an easy lasagna!

Pumpkin Rice Pudding
I used 3 1/2 cups of milk like others had suggested, and the pudding turned out really dry. I'm not sure if the extra 1/2 cup of milk would have made it more "custardy". Maybe the three cups of rice was too much? I'm not sure what to do with this recipe to make it better.

High Altitude Deep Dish Brownies
I made this recipe at 5000', it turned out great! The time was right on. The nuts and chips are an added touch, making the brownies even tastier. I will be making these again.
