I am mother of 19 month old and have a full time career as a Clinical Nursing Unit Supervisor. I love to train to run 1/2 marathons and make healthy food. My husband and I enjoy a really good meal and he also has a serious sweet tooth--so my goal has been to make tasty, healthy, quick, and easy food for my family.

Chuck's Favorite Mac and Cheese
Made this recipe for Thanksgiving this year, it was a hit! Had to make extra for leftovers for home. At the suggestion of others who rated, I increased the amount of cheddar cheese, added a little milk, and also cream cheese. Thanks for the awesome recipe.

Mocha Ice Cream
this recipe was great. Only thing I would do differently is add more coffee. I even used splenda in place of the sugar. I also added marshmallows and chocolate chips. Thank you for a great recipe!

Blueberry Sauce
Great recipe. I used blackberries, because that is what I had on hand. Also substituted splenda for the white sugar. I used fresh squeezed orange juice, and my recommendation is that if you do, stick with the original amount. I took the advice of others and decreased the amount to 1/2 cup of OJ, but ended up adding the other 1/2 at the end. At first the mixture seemed to thick, but this is remedied by adding a little more water for desired consistency (also helped that I added the fresh squeezed oj). I love the almond extract, gives an additional dimension.
