Oatmeal Pancakes II

I only had regular rolled oats so I blitzed them in my spice mill. Also had no buttermilk so I used 1/2 cup milk plus 1/4 cup yogurt. Left out the sugar. The recipe made three 7-inch pancakes. They were great with some apricot jam.

Zucchini Brownies

Great brownies! The batter/dough is kinda like chocolate mortar. Use a fine grater for the zucchini and don't pack it into the measuring cup. I also like to mix the salt with the grated zucchini to extract it's moisture, then mix the wet mess in with the other ingredients.

Ultimate Irresistible Granola

This is a great granola. Currently I use 7 cups oats, 2 cups raisins/craisins, 3-4 cups assorted nuts/seeds, 1/3 cup oil, 1/2 cup honey, and 2 tsp cinnamon. This is considerably less sweet than the original but that's how I like it. Healthy walnut oil is a bit expensive but gives a nice flavor.

Indian Dahl with Spinach

My family enjoyed this recipe. To reduce it to one pot, I fried the mustard seeds in butter, then added the onions. Once the onions were softened, I mixed in all the other spices (doubled the cumin). Then in went the water, drained lentils, spinach (two 10-oz packages, squeezed semi-dry), and 1 tsp salt. Once the lentils were done, I added light coconut milk. To make it more spicy, you can substitute cayenne pepper for the chili powder.

Chicken Biryani, Hyderabadi Style

This was very good. The flavors were subtle but distinctive even without the curry leaves. I halved the recipe and used one large chicken breast, which shortened the cooking time. It goes well with "Indian Dal with Spinach" also from this site.

Acorn Squash Gnocchi with Parmesan Sage Beurre Blanc

These tasted good and were an interesting change of pace. Unfortunately, the whole wheat flour completely overpowered the squash. Semolina flour might be a better choice for letting the squash flavor come through.

Lentil Soup

We enjoyed this soup very much, and it is indeed much better on the 2nd day. I added much more garlic, twice the paprika, and also used some cumin and hot chile sauce. We skipped the parmesan cheese, and served it instead with a curried fried egg on top.

Sicilian Homemade Ricotta Cheese

This was really fun and produced some yummy cheese. Real ricotta is made from the whey leftover from making hard cheese. This cheese method is more similar to queso blanco or paneer.

Cabbage Goulash

Even as someone who just recently decided that cabbage is edible, I thought this dish was quite tasty. The cabbage lightens up the meat very nicely. I added 2 tsp ground cumin and 1 tsp caraway seeds, and served it with gold potatoes. I'll definitely make it again.

Alan's Ultimate Bran Muffins

I love these muffins, but they're even better with nuts. The only problems I encounter are that they stick to my pans and I always have to cook them for at least 30 minutes.
