Hot Fudge Ice Cream Bar Dessert

Although I haven't prepared this recipe exactly as written, I will give it 5 stars! As a test, before serving to a dinner party, I made a 'one serving' sample using one ice cream sandwich cut in half, (& ingredients on hand...)Hershey's Chocolate Syrup, Smucker's Caramel Syrup, Cool Whip, Heath Toffee Bits. Using my own ingredients, I followed the recipe for assembly. This was AWESOME!! When the 'sample' passed, I chose to make this dessert for my dinner party using the exact ingredients that I used in my sample. It was a HUGE HIT, very rich and very good! I suggest cutting very small pieces OR...next time I make this (and I will make this again!) I might make it a one layer dessert. While two layers are awesome for presentation and makes it a 'bigger' dessert...the top layer seem to slide around when cutting, serving and eating. This dessert is so good and so rich, I believe one layer would be just as good and you wouldn't have the 'slippage' you do with 2 layers. I don't know though...this was just AWESOME prepared as instructed!

Cornbread and Sausage Stuffing

I made a half recipe to test it before taking it to our Thanksgiving Dinner. We loved it! I always make a 9x13 pan of stuffing for Thanksgiving and usually bring home at least half of that. This year I wanted something different from the stuffing we've had every year for the last 42 years! This year was different...I made a 9x13 pan of this recipe and only had 1 small serving left. We nibbled on that while doing the dishes. This is a keeper in our family and will probably be made for the next 42 years LOL.

Mexican Rice II

Simple and yummy! My 4 yo grandson still thinks I'm teasing when I told him Grammy cooked this rice. He thinks I bought it at our favorite mexican restaurant, brought it home and put it in a pan to make everyone think I cooked it! I'll take that as a compliment. :-)

Refried Beans Without the Refry

These are AWESOME!! The only changes I made were suggestions of other reviewers...I used 3 tsp. salt and 1/2 chicken broth, 1/2 water. I did cook them on low and it took about 12 hours but I was afraid to leave it on high while I was gone because my crock pot cooks a little hot on high. I was concerned about the halved onion...to remove or not to remove...it cooked up really soft and mixed in just fine with the beans (I used a hand mixer). I did end up draining off about 4 cups of 'broth' that I haven't been able to bring myself to throw away (it's really good). I think I will use it in place of the chicken broth in another recipe I'm going to try from this site (Mexican Rice II) and see what happens with that. If it works, I'll make this recipe again and again :-) with the recommended amount of liquid and use the broth in other dishes. If my 'bean broth' idea is a flop, then next time, I will reduce the liquid to 2 cans chicken broth and 2 cans water (about 7 cups). Cooking the beans on high would most likely require 9 cups liquid, but I cooked on low. A word of caution…after smelling these beans cooking, I got a little anxious to taste them and immediately started dipping out of the crock pot after mashing the beans…they are hot and will burn the roof of your mouth LOL…no matter how good they smell, take a moment to blow on that first bite to cool it off LOL.

Ground Beef Curly Noodle

I followed this recipe exactly as written and was surprised to find that it was really good. Served with strawberry muffins, we all enjoyed it. It's definitely kid friendly and budget friendly, not to mention quick and easy. It's a keeper in our house.

General Tsao's Chicken

We all enjoyed this recipe with a few minor changes. I used regular white vinegar because that's all I had and I used a full can of chicken broth no MSG. I also used chicken thighs and added broccoli to the sauce. Next time I may cut down on the sugar a little but we will definitely have this again.

Tortillas I

As many said, the servings were off, but maybe it's just the 'idea' of a serving that's off. I crave tortillas sometimes and can't always run to the store to buy them. Store bought tortillas are great if I have them, but these were really good. The dough is easy to work with, it rolled out well. The taste was good too. Maybe a touch more salt next time. I did like the fresh taste and the fact that they were quick and easy. I can roll them however thick/thin I want & whatever size I want. The recipe is in my box as a keeper.

Black Beans with Bacon

I've never had black beans before, but this was good. The carrots were a bit crunchy, I might try matchstick (julienned) carrots next time. The flavor was great and I think even better the next day. I cooked some rice, mixed it in and wrapped it all in a tortilla for lunch the next day. That was awesome except for the 'soggy' bacon. My DS, 13 & very picky, wouldn't even taste it because he doesn't think beans should be black (we usually eat pinto, navy, kidney & green beans) but our rule is "You have to take at least one 'real' bite before you can judge the food--good or bad". I later caught him sneaking a bite, not once, but 3 times!! lol I'll try this recipe again if for no other reason than the fact that I liked it & my DD 4 liked it and it made an awesome lunch the next day! I'm guessing DS13 might even put some on his plate next time.

Garlic Chicken

This was very good and easy too! We couldn't taste the garlic (I used the minced garlic in the little glass jar from the store) but we loved the chicken anyway. I'm a garlic fan and use that garlic all the time with good results, maybe it's because it was the bottom of the jar. Who knows, next time I'll either use fresh garlic or I'll crush it a little with a fork to release the flavor. Maybe I just didn't heat the mixture long enough. Loved the recipe anyway and will definetly be making it again...garlic flavor will only add a star to an already awesome recipe! Thanks Carol! BTW--I was going to give it 4 stars due to the garlic thing, but my VERY finicky 22 yo ate with us and said, "Hey Momma, I forgot you could cook so good." That was the 5th star for me!! If I get it right next time and taste the garlic--It will be a 6 star recipe at my house.

Chicken Enchiladas II

AWESOME!!!!! I don't know what else to say. I even screwed up the directions and they were so good. I was distracted and mixed all the sauce ingredients along with the chicken (which I had shredded) before setting the 1/4 aside. So we had shredded chicken in the sauce on top too. Oh well, we loved them and will do it right next time! :)
