Roasted Pumpkin Seeds

Classic and delicious! I made my second batch using a tablespoon of melted butter instead of the suggested 2 tsp, the extra butter brought out more of a nutty flavor. They were so yummy, my whole family loved them!

Roast Sticky Chicken-Rotisserie Style

This was yummy and the meat was "fall off the bone" tender. My husband raved about this dish all night, so I'll be making it a lot, I'm sure! Packed with flavor and juices...

Grilled Vegetable Platter

Excellent and so easy! We used, zuch, squash, red onion, mushrooms, red and orange bell peppers & asparagus. We put everything in a plastic bag as directed, but used a full tablespoon (instead of 3/4) of seasoned salt. We let the veggies marinate for about an hour before grilling. We put everything except the zuch & squash in a grill basket. The zuch & squash we put directly on the grill grate. Grilled for about 20 minutes total and this was delicious!

Blackened Chicken

This is a good basic blackening rub, and putting the chicken in the oven kept it so moist and yummy. I've made it twice: 1st time I followed the ingredients exactly & my husband thought it was a little bland. 2nd time, I added 1/2 tsp. rubbed sage & 1/2 tsp garlic powder which definitely added some zip and more flavor. I also coated both sides the second time around. My husband and I dipped the chicken in Blue Cheese dressing which went great with the spices. This is now one of my husband's favorites!

Grilled Pineapple Slices

These were pretty good, but I think I may have cut the slices too thick. If they were thinner, I think they would have been better. We had them on the grill for about 10 minutes each side and they still didn't cook through, so next time we will slice them thinner. Otherwise, the cinnamon taste was quite good. We also sprinkled coconut flakes over them, and this added a lot of taste - I would suggest adding the coconut!

Scott Ure's Clams And Garlic

Excellent recipe! Best clams we've ever had at home. We like our clams well done, so we didn't have a lot of the juice left. Next time we'll add another 1/2 cup of wine and 1 tbsp of butter half way through steaming to ensure we have more juice because the little bit of juice we did have was so yummy!! We had this as an appetizer with white crusty baguette, so good! Excellent with the main course we had of Red Snapper with Orange-Almond Sauce. Adding this one into my recipe box.

Scalloped Potatoes for the BBQ

These are really good, even though we were out of fresh basil, we used dried basil and they still tasted great. We didn't flip them half way through as suggested, and we got some crispy potatoes on the bottom which I actually liked better than the "done just right" potatoes! We're looking forward to trying this with fresh basil next time. Great easy recipe! Note: I rubbed olive oil all over the foil before placing in the ingredients, and it really helped them from sticking to the foil.

Grilled Rock Lobster Tails

Ok, this is the bomb! We LOVED it! We lived on a sailboat in the Caribbean for 6 months and had grilled lobster on numerous occasions, but we've never had lobster this great! It's the perfect mix to make the lobster taste better than ever, thanks for a great recipe!

Summer Pasta with Basil, Tomatoes and Cheese

This is our household favorite pasta dish! I always make it for guests, and everyone always wants the recipe. I read the other reviews, and don't let the cheese melting problem some people mention deter you from trying this delicious recipe. TIPS FOR GETTING THE CHEESE TO MELT: 1. Add cheese to pasta as soon as pasta is drained. 2. Use a stainless steel bowl when mixing the cheese with the pasta so the heat from the cooked pasta will be retained, aiding in a quicker melting process. 3. Use two forks and go back and forth in opposite directions right after adding the cheese. This helps to distribute the cheese more evenly.
