Holiday Chicken Salad

I omit the celery and green pepper because they aren't my favorites, and it still tastes wonderful! I also added just a dash of garlic powder.

Kathy's Delicious Whole Slow Cooker Chicken

Reviewed: Jan. 5, 2011
I changed this recipe up a little, and it was wonderful! I used boneless chicken breasts instead of a whole chicken (I used two, but I think you could do three or maybe even four with this much liquid), and I cut up big chunks of potatoes, carrots, and fresh green beans and put those in as well. It came out tasting like the comfort and warmth of pot roast, but made with chicken! We LOVED it!

I added about 1/4 tsp baking soda the second time I made these and they came out MUCH fluffier!

Baked it in a water bath like other reviewers said and it turned out PERFECTLY! It was my first cheesecake attempt, and I could not have been happier.

Jay's Signature Pizza Crust

Reviewed: Aug. 22, 2010
WONDERFUL! I sprinkled oregano, basil, coarse salt, ground pepper, rosemary, and garlic powder around the edges of the crust after brushing it with olive oil. Then about 5 minutes before I took the pizza out, I sprinkled fresh grated parmesan over the crust and toppings.

They were just a little less crispy than I would have liked... Next time, I think I'll use the notes of another reviewer and cook them at 400 for longer. Thanks!!!

Wonderful and beautiful! I left out the red bell pepper since my sister doesn't like it and used pecans instead of almonds. Delicious!

Good flavor, but my sauce turned out a little grainy. I'm going to keep trying to find an awesome mac and cheese recipe.

Easy Broccoli Quiche

Reviewed: Mar. 12, 2010
This was wonderful, but I made some changes. I made my own pie crust (don't be intimidated - there are some really easy, really yummy crust recipes out there) and put a mixture of mozzarella and cheddar cheese on the bottom so that the crust wouldn't get soggy. I cooked a couple of pieces of bacon, then threw the veggies in with it instead of using butter. I also added mushrooms. I only used 3 eggs and about a cup of milk. If I had used 4, I think it would not have fit in the pie crust. I topped the whole thing with a small sprinkle of cheddar and it was incredible! Even my picky sister loved it.

Best Broccoli Cheddar Soup

Reviewed: Mar. 1, 2010
I used Lipton's vegetable soup packets (both of them), with 4 cups of water. I threw in some cornstarch and two small potatoes to thicken it up, and let it simmer a lot longer than it said. Served it up with a crusty Asiago cheese bread and it was AWESOME!

Homemade Chicken Fettuccine

Reviewed: Jan. 9, 2010
Very good recipe. It tastes very simple without being bland, and gets rave reviews whenever I make it. I add a handful of onion to saute with the garlic, and it gives it a nice sweet flavor. I also use the whole pint of heavy whipping cream. I don't think there would be enough sauce without it. Add broccoli, artichoke, sun-dried tomatoes, or your other favorite vegetables for wonderful variations!

Fried Cabbage II

Reviewed: Jan. 9, 2010
This was excellent! I cooked everything a little longer than it suggests because the cabbage wasn't fully wilted at 15 minutes. I probably let it go for about 20-25 minutes. Also, my sister hates vinegar, so I added the vinegar about 5 minutes before taking it off the heat so that some of the taste cooked out. It still had a nice fresh bite without her being able to identify it as vinegar. :-) We all loved it!

Minestrone Soup I

Reviewed: Jan. 9, 2010
This was delicious!!! I added half a cup of frozen green beans (at the same time as the potatoes) and sauteed the cabbage along with the onion and carrots to give it that sweet flavor. I also doubled the tomato paste. Incredible. My sister's boyfriend didn't leave any leftovers, so we're making it again only two days later!

Sweet, Sticky and Spicy Chicken

Reviewed: May 20, 2009
Absolutely incredible, and CHEAP!!! I doubled the sauce mixture and used ground ginger (I'm not the biggest fan of ginger, so I only used 1/2 teaspoon) and only 2 teaspoons of a very hot chili sauce. I coated the chicken with flour (per another reviewer's instructions) before cooking it in a wok. I used a rice cooker to cook jasmine rice and steam broccoli, then spooned pineapple tidbits over the rice and served it all together in a bowl with chopsticks. Incredible!!! Just like something you'd get at an upscale Chinese restaurant.
