Spinach and Rice Alfredo

Wonderfully tasty and so quick and easy to prepare! I'm always looking for new ways to serve rice and this one is definitely a keeper. As another reviewer suggested, I added a little extra garlic as well as a little more cheese. Yum!

Lamb and Winter Vegetable Stew

Wow, does this make the house smell good! Used lamb shoulder chops....removed the meat and cut into pieces but also added the bones to broth as it simmered and removed later. I also added an extra clove of garlic and extra vegetables. Comfort food at it's best!

White Cheese Chicken Lasagna

Wonderful! I marinated boneless chicken breasts in a cajun marinade then grilled and sliced. I also divided the spinach, using a 1/2 pkg mixed into the ricotta. The rest of the spinach was sauteed with chopped onions, shredded carrots and mushrooms. This mixture became another layer. Delicious!

Grilled Salmon II

Excellent! You must marinate overnight or all day to get the full flavor. At the suggestion of others, I used a full tablespoon of fresh ginger, 2 cloves of garlic and substituted olive oil for the peanut oil. I didn't use green onions simply because I didn't have any. Will add next time to see if it's really needed but it was so good even without. My family agrees...it's a keeper!

Pumpkin Chili Mexicana

If I hadn't read the reviews, I probably wouldn't have tried this recipe. I mean, pumpkin in chili??? But it tastes great! You really can't tell there is pumpkin in it. I do recommend that you wait until the next day to eat it. All chili tastes better after the ingredients get to "know each other". A smart way to add extra vitamins and your kids will never know. Great served over brown rice and topped with a little sour cream and hot sauce.

Prize Winning Baby Back Ribs

For years I have been trying recipes for ribs, most requiring plenty of effort and time. None of those recipes turned out as well as this one. I can't believe how little effort was involved but they tasted like I slaved for hours. I love this recipe and will use it again and again!

This is very similar to a recipe I have made for years. Try using butterscotch pudding mix instead and also add chopped pecans. YUM!

Creamy Au Gratin Potatoes

This was very good, but next time I may parboil the potatoes. For some reason they did not cook in the time alloted. I also took up the suggestions to add extra cheese and fresh minced garlic...yummm!

Better Than Sex Cake II

Everyone who tried it loved it and I would make it again even though it was not as decadent as I expected. It's a good cake but not as good as it's title! Next time I might try adding Kahlua or Frangelica liqeur for a little different flavor.

Rosemary Mashed Potatoes and Yams

We all loved this...even my kids! If you like the flavor of roasted garlic, you'll love these potatoes. My 12 year old daughter asked me to make this again before she was even finished her dinner! Very easy to make and smells SO GOOD when baking!

Suki's Spinach and Feta Pasta

I have been making this recipe for many years now and it still remains my all time favorite! One thing I can't stress enough...you MUST use a GOOD quality feta. The kind you get in a grocery store just doesn't have enough flavor. I'm lucky enough to have a Greek deli nearby that offers excellent feta. I also double the amount of spinach and always add extra garlic and red pepper flakes. If you'd like it a bit more hearty, try adding chicken tenderloins, cut up and sauteed.
