About this Cook
I'm a spunky young preschool teacher and graphic designer who loves eating well. I love to cook and entertain!
My favorite things to cook
Chicken Saltimbocca, Cuban Pork Tenderloin with Soffrito Rice, Chicken Cutlets, Jambalaya, Red Beans & Rice, Split Pea Soup, Snickerdoodles, Christmas Cookies, Brownies
My favorite family cooking traditions
I'm from the Gulf Coast, where food played a big role in my life. I grew up eating bowls of Mardi Gras gumbo, chicken n dumplins, fried shrimp po'boys, red beans & rice, fried chicken, and biscuits. Mmmm mmm!
My cooking triumphs
-Snickerdoodles so good that my friend ate 72 in one sitting. Really. -This past Christmas, my mom basically said that I make better Christmas cookies than her. I don't think that's true but what a compliment! -Anything that makes my husband say, "This is the best thing you've ever made," which he says a lot. :-)
My cooking tragedies
Once I got the amounts in a recipe mixed up and used about 1/2 the flour needed and twice the sugar. Needless to say the cookies came out flat and completely inedible.

Catherine's Spicy Chicken Soup
My husband loves this soup. I go through the effort of cooking & shredding the chicken myself, which I think makes a big difference in the texture of the soup. It has become a winter staple in our house, and it is great for leftovers.

Cajun Spiced Pork Chops
This is a fantastic, easy dish. Sometimes I grill them, other times I pan fry them. One of my husband's favorites.

Country Apple Dumplings
I usually don't go for recipes that involve pre-made ingredients (like the dough & soda) but these are amazing. Every time I make these people go crazy for them and ask for the recipe.
