Orange Mango Chicken

Reviewed: Jul. 6, 2009
Very flavorful and a great meal to throw together when you don't have a lot of time. Made this with stringbeans and orange rice and everything went together well. Next time I make this, I'll add some peppers and onions to the dish. The sauce was good but very sweet, so if you're not a huge fan of sweetness in your main course, be aware of that.

Penne with Chicken and Asparagus

Reviewed: Jun. 22, 2009
Great, easy dinner with ingredients that are generally on hand. I made the recipe exactly as written plus the addition of some mushrooms and both my girlfriend and I loved it. As others have said, it's very light and the broth lightly coats the pasta rather than provides an actual sauce, but I find this to be a positive as it keeps the meal healthy. Has great potential to make frequent appearances on nights where we don't feel super hungry.

Chicken, Avocado and Mango Salad

Reviewed: Jun. 22, 2009
I was really surprised by how good this recipe turned out. I was a little skeptical of the blend of ingredients, but the sweetness of the mango blended nicely with the taste of the avocado and the mild spiciness of the dressing. Unfortunately my mango wasn't quite ripe and my avocado was a little TOO ripe, so I don't think my finished product lived up to this recipe's full potential, but it was so good that I have incentive to try again with better produce. I'm not much of a "salad guy" (though I'm trying) so my seal of approval and plan to try this one again says a lot. Next time I want to try it with spinach instead of lettuce.

Chicken Fajita Melts

Incredible sandwich. I made this exactly as is (well, plus the addition of a little bit of guacamole after I took it out of the broiler) and it was excellent. Great flavor, and surprisingly not messy.

Cousin Cosmo's Greek Chicken

Reviewed: Mar. 25, 2009
Really good recipe that deviates a bit from the way I usually use up chicken breasts. I added a little extra lemon to the chicken broth mixture and used some frozen spinach after realizing I didn't have fresh. In the future, I'm going to cut pockets into the chicken and stuff it, rather than securing it with toothpicks. I found using the left over flour in the broth didn't make much of a difference in the overall outcome and the sauce was still a little watery, so feel free to omit it, or use cornstarch if you're looking for a thicker sauce. Definitely going to try this again. Both my parents LOVED it.

A Good Easy Garlic Chicken

Reviewed: Feb. 10, 2009
Absolute perfect recipe that can be made with common ingredients found around the house. Tastes delicious and flavorful, without a ton of work and effort. Follow the suggestions of other reviewers and try to punch it up a little with gravy, or additional seasonings. It's a great basic recipe that can be modified to suit individual tastes with the addition of a few ingredients. This chicken is among my go to recipes for when I'm short on time and not sure what to make.

Slow Cooker Chicken and Dumplings

Reviewed: Feb. 2, 2009
Really good meal, especially on a cold night. Took the advice of some other reviewers and did one can cream of chicken, one can cream of mushroom, rather than two cans of cream of chicken. Also subbed a cup of chicken broth for the water and added some poultry seasoning, carrots and peas (great meal to sneak veggies into if you have eaters who usually pass on them), and made my own dumplings with bisquick. Really good flavor, but mine ended up being a little watery, when I was expecting it to come out thick. Additionally, and I'm sure it varies between slow cookers, my dumplings took a LOT longer than 10 minutes to cook. No big deal as the meal was still delicious, but something to keep in mind when you're planning on having dinner done at a certain time.

Salisbury Steak

Reviewed: Jan. 29, 2009
Simply put, amazing. I tried this for dinner tonight, and though I expected it to turn out good with a 4.5 star rating, I don't think I had planned on it turning out so delicious. Very well seasoned, and perfectly moist. I made mine with extra chopped onions in the gravy, mashed potatoes and peas, put the potatoes and meat in a baking dish to cook and let the broiler lightly brown the tops of the potatoes. Excellent dinner that my whole family loved.

Fried Rice Restaurant Style

Reviewed: Jan. 27, 2009
Made this exactly as stated in the recipe and it was good, but not quite as good as the fried rice I'm used to at Chinese restaurants. Overall, I think this recipe has a chance for improvement if I incorporate some of the suggestions others made, including adding beef broth to the rice. As it was the rice made a good side dish, but is not something I would rave over. We'll see how it goes with some adjustments.

Traditional Mashed Potatoes

Reviewed: Jan. 20, 2009
Quite possibly the best mashed potatoes I've ever had. Extremely creamy, with a thick enough substance to be filling. I added a little extra pepper and a dash of onion powder, and the only thing I can really say is "wow". Great side dish that goes with almost anything, and the best recipe for traditional, no-nonsense potatoes I've had.

Pumpkin Fudge

Reviewed: Jan. 12, 2009
This was my first attempt at making fudge, and I've got to say it turned out rather well. The fudge set decently and I didn't have any of the problems with it turning into a sticky pile of goo that other reviewers seem to have had. The finished product had a pretty decent flavor, but was EXTREMELY sweet, so if there was a way to scale back slightly on the sweetness, it would make this even better. Additionally, the texture wasn't exactly what I was expecting, which isn't a complaint, but if you're expecting and extremely smooth and creamy end product you're in for a little bit of a surprise. Like other reviewers, I used nutmeg and cloves in addition to the cinnamon, and added an extra little dash of each of the spices, since a teaspoon in total seemed like it would leave the fudge tasting a little bland. Overall, I was really pleased with how this turned out, but if there's a way to cut back on how sweet the fudge is, I would go for it as I couldn't have more than a small bite or two before I felt I had my fill of sugar (though really, one probably shouldn't be having more than a bite or two of fudge anyway, so I'll credit the recipe with having built-in portion control).

Glazed Orange Spice Cookies

Reviewed: Dec. 23, 2008
WOW! My mom and I added this to our Christmas cookie line-up and it was an extremely welcome addition. The glaze is delicious and the sweetness of it really compliments the spice cookie nicely. The only suggestion I could think to make would be to add a little more orange juice to the glaze mixture to give it a little more orange flavor, but otherwise this cookie was amazing. A word of caution, the recipe makes a lot of glaze and even after brushing a decent amount onto the cookies I still had some left over. I'm not complaining though, as I used the leftovers on a few slices of pumpkin bread I made, and it was delicious. Definitely a keeper that's likely to make an appearance at future Christmases (if I can wait that long to make it again).

Slow Cooker Manly Stew

Reviewed: Dec. 17, 2008
DELICIOUS stew. Made this Sunday night while craving a good cold weather meal (had to take advantage of the fact it was actually chilly here) and it definitely did not disappoint. As others suggested I threw in some potaotes, carrots, and a little bit of chopped garlic. It was super filling, but so delicious I made my way back into the kitchen for seconds!

Sweet, Sticky and Spicy Chicken

Reviewed: Sep. 14, 2008
A quick, simple and delicious meal. The flavors of the ingredients really blend well together. Though the dish has a little bit of a kick to it, I could stand it slightly more spicy, so I may add a little extra hot sauce next time (I used Frank's Buffalo Wing sauce). Also, I used ground ginger instead of fresh ginger root, which I'm sure would have made the dish even better. As a previous reviewer said, there will be entirely too much sauce if you double the recipe, however, if you're the kind of person who enjoys a little extra sauce, you may want to make another half a serving, which also goes great over rice.

Salsafied Chicken and Rice

Reviewed: Sep. 14, 2008
Delicious and rather easy to make. I cooked the cut up chicken with some garlic and onion and added a little chopped cilantro while cooking the rice. It went great in burritos with a bit of sour cream. I'll definitely be making this one again.

Honey Mustard Grilled Chicken

Reviewed: Jun. 29, 2008
Overall a good, easy recipe. The honey mustard tastes great, and the addition of steak sauce gives it a nice flavor. I barbecue the chicken breasts, melted some pepperjack over them, and stuck them on a roll with some sauteed onions, and it made a delicious, quick meal. This one is definitely a keeper.

Detroit Hot Honey Wings

Reviewed: Jun. 5, 2008
I made the sauce for this and put it over some seasoned grilled chicken cutlets, and it was absolutely delicious. It had the perfect amount of heat, and the honey really added to the flavor of it. My friends can never decide between traditional buffalo wings and honey bbq wings, and I think this recipe will keep everyone happy.

Lazygirl's Ground Turkey Stroganoff

Reviewed: Dec. 12, 2007
This was a good, fairly simple meal to prepare. Even my mother, who doesn't care for the taste of ground turkey (especially in dishes where she's used to ground beef) enjoyed this. As other reviewers suggested, I added a small onion and some garlic. I also added some Bisto powdered gravy, to taste (didn't have any paprika, and wanted to season the turkey mixture a little bit)and a little bit of sour cream at the end. My mom poured a little splash of Merlot over hers, which she said gave it a richer flavor. Overall, a good way to use up ground turkey when you don't know what to make other than turkey burgers.

Dad's Down Home Cornbread and Jalapeno Meatloaf

Reviewed: Nov. 5, 2007
This recipe was ok, but ended up tasting like a regular meatloaf, with very little added kick to it. I had expected the jalapenos to give the recipe a spicier taste, but it adds very little to the overall recipe. In defense of the recipe, I bought the ingredients and left the recipe in the hands of my mom while I went out to work, so maybe she didn't do it exactly as planned. While many reviewers complain about their meatloaf being greasy, ours turned out very dry. I think this recipe could have potential though, so I'd like to give it another shot, adding more jalapenos, a box of cornbread mix, as other reviewers suggested, some hot sausage instead of just ground pork, and maybe some hot salsa to give the recipe a little extra heat and resolve some of the issues with dryness. Overall, this recipe is a good start, but I think it can be built upon and improved. I'll update next time I make this with my modifications.
