Cheddar Bay Biscuits

Yummy! I gave the recipe four stars because I think it needed a few additions to really punch up the flavor. I added garlic powder, fresh parsley and green onions to the batter. I also used fresh parsley in the melted butter and brushed it on before the biscuits were all the way done and then again after they came out of the oven. I think next time I will add some Old Bay as well. MMMMMMMMMMMMM......

Eggplant Supper Soup

Very tasty! I left out the celery since I was out and I added a can of tomato paste. I also cubed then salted my eggplant and let it sit for an hour then I rinsed it and patted dry while the meat was cooking. When the meat was done I removed it from the pan and sauted the eggplant and carrot. Then I put everything in the pot and just let it simmer for about an hour before adding the macaroni. It came out great!

Chewy Coconut Cookies

Loved the flavor of these cookies but mine did come out very flat and thin. Maybe it's time for new baking soda. I'll definitely make them again!

I did not care for this recipe. The sauce had way too much peanut butter. Neither my husband or I could eat it! Usually I can salvage recipes but this was beyond help.

World's Best Lasagna

No Lie! This is the World's best Lasagna! My husband raved for days about this one. I didn't have any fennel seed so I left it out and added a pinch of cinnamon instead. Absolutely divine!

Bow Tie Tuna Florentine

I couldn't find a creamy pesto mix so I changed the recipe to use what I had. I used a jar of alfredo sauce and mixed in most of a 6 oz jar of basil pesto. I kept the rest of the ingredients the same and it was very tasty.

I wasn't crazy about this one. The sauce just didn't seem to compliment the fish, it just drowned it. Maybe with some alterations this could work but I didn't like the recipe as written.

Patriot Chipotle Ranch Dip

Instead of adding more Ranch seasoning, I just used less sour cream. I used one 16 ounce container and kept the rest of the ingredients the same. Very tasty though next time I will use less cilantro or maybe leave it out completely. It was a little overpowering to me but everyone else liked the flavor.

Classy Chicken

THE BEST CHICKEN DISH EVER! This was so good. As this was cooking I made Sauteed Portobellos and Spinach (from this site) then I mixed the two dishes together and served it all over whole wheat egg noodles. My husband loved it and the leftovers were great too!

Couscous with Mushrooms and Sun-Dried Tomatoes

I thought this was pretty good. I left out the basil but I don't think it needed it. I also added added 1 Tablspoon of balsamic vinegar and 1 Tablespoon of honey. I think it helped cut the strong tomato taste a little. Next time I'll probably cut back a little on the tomatoes and add more mushrooms.

Shrimp with Ginger and Snow Peas

I thought it was a little bland. It's a good base but it needs something else. My husband added soy sauce to his and that seemed to help. I think maybe add some soy sauce in place of part of the wine and a little lemon juice to finish it and maybe some red pepper flakes in with onions for heat.

Red and Green Christmas Jalapeno Jelly

Excellent. Gave this as christmas gifts and everyone just loved it. It's great on crackers with cream cheese or used as a glaze on chicken (just mix it with dijon mustard and some honey).

Easy Tilapia with Wine and Tomatoes

This is a good basic recipe but it needs some additional flavor. I recommend adding some onions to the packet and definitely add some lemon. I had one piece left over that I sauted for lunch the next day and it turned out even better, I just added a little lemon pepper to it before throwing it in the pan.

Blackened Tilapia with Secret Hobo Spices

Very tasty! It was a little to spicy for my husband's taste but I loved it! There wasn't any juice in the pan so after the fish was done I deglazed the pan with some with wine and a little butter. MMMMMMM......... I had a lot of spice mix left over, enough to fill up an empty spice jar so next time I'm already prepared.

Green Bean and Feta Salad

Very tasty! I used probably half the amount of oil and vinegar called for (I never measure anything) and I used brown sugar instead of white. I didn't have time to let it marinate in the fridge but an hour of sitting on the counter was plenty. It made a nice side for the Blackened Tilapia from this site.

Peppers Roasted with Garlic, Basil and Tomatoes

Delicious! I made a few changes, though. I added some chopped fresh mushrooms and some parmesan cheese to the mixture. I also topped with a sprinkling of soft whole wheat bread crumbs for the second 15 minutes in the oven. I didn't have any herb vinegar so I left that out and they were still excellent. My husband claims to hate peppers but he actually complimented me on how good these were.
