Downeast Maine Pumpkin Bread
I followed the reviewer's suggestions about 1/2 c applesauce and 1/2 c. oil. I also replaced 1 c. white sugar with brown. This was my first time making pumpkin bread and now I have the confidence to play with this recipe. This turned out perfect and moist. I would love to add some nuts or chocolate chips next time.

Chocolate Peanut Butter Cup Cookies
Very good. I did use 1/2 butter, 1/2 shortening. I only used about 1/8 c. cocoa powder because I didn't want a dark cookie. I didn't have buttercups so I omitted those. Still a very good cookie. It will satisfy your pb/choc cravings. Just be sure to have a glass of milk nearby.

Clone of a Cinnabon
Perfectly delicious in every way! I did make a couple of changes though. I DID NOT USE A BREAD MACHINE. I was having trouble getting my yeast to activate and so I took a tip from my dinner rolls recipe. Instead of using 1 c. milk, I heated 1/2 c. milk and 1/2 c. water in the microwave for 45 seconds. Then I dissolved the sugar and then added the yeast. It activated just right. Then I followed the directions. I did mix the butter, sugar and cinnamon together and spread it out over the dough. I had no problem with the mixture dripping out. In fact, when I tried to turn the pan upside down, my rolls almost fell out! So, this recipe will be my #1 cinnamon roll recipe. Can't wait to bake these for Christmas morning!
