Mushroom, Leek, Chicken Sausage and Tortellini Soup
Delish! My boys don't like mushrooms so instead I substituted already cooked carrots at the end. Also cut the hot sauce back to 1 tablespoon, for my 2 year-old. The sweetness of the chicken sausage with the little spice of the hot sauce made this!

Tangy Pear and Blue Cheese Salad
Fabulous! I used feta rather than blue cheese and I used a big box of spring mix with 1/2 the dressing.

Strawberry-Mango Mesclun Salad
This was amazing! I made it at work and so many ladies asked for the recipe to make this one for Easter. The store was out of strawberries so I skipped them, but it was still delish!
