Best Ever Muffins

I have made these two times (once in my older oven and today in my brand new oven) and followed the recipe exactly: both batches were burned on the bottom. I would definetly check on the muffins around the 15 min. mark.

Pumpkin Fluff Dip

I had been trying forever to recreate Coco's Harvest Pie. This is the closest that I have found for the mousse topping that goes on top of the pumpkin pie. My hubby and I cannot get enough of this stuff! Yum Yum Yum. And It keeps for about a week in the fridge.

Madeleines II

So awesome, so light, so fluffy, so what a Madeleine should be! I did not have a lemon in the house, so I just added 1/4 tsp. of lemon extract. Bought the madeleine pan at BB&Beyond for close to $12 with coupon!

I tripled this recipe for a shower. It was awesome! There was quite a bit of dressing on the bottom, so next time I will reduce the amount (even for the 6 serving).

Basil Tomato Soup

Wow, this one is good! I have made the Nordy's Cafe one for a few years, but this one tastes just about as good and is half the work! I reduced the butter by half and substituted half n half for the cream. ***The recipe as is: 209 cal. /14.6 g fat per serving If you substitute half n half for the heavy whipping cream and reduce the butter to 1/4 cup it is: 160 cal / 8 g fat.

Baked Teriyaki Chicken

Yum, Yum, Yum!!! I too lined the bottom of my pan with foil and covered it as well during the baking. I just poured all the teriyaki sauce over the chicken, not big on basting! Loved the flavor and the moistness! Will definetly make again!

Easy Pumpkin Muffins

I totally thought I was going to love this recipe, but i didn't. I did not like the dense texture, nor was the muffin appetizing to look at. Yes it is easy peasy to make, but that is about it. Would not make again nor would I pass on the recipe.

Best Marinara Sauce Yet

My search has ended for the perfect Marinara sauce! It is soooo good and soooo easy to prepare. I added a tbs. of brown sugar. Next time I will double in order to have a spare batch in the freezer.

Momma's Marinara Sauce

Finally...a delicious and easy marinara sauce! I only had 45 min. to make the sauce and it still tasted great to me and my family. I can't wait to try it when it has had a few hours to simmer!
