Lemon Chicken and Rice
Nice, simple, easy, quick meal. Hubby got a little tired of it toward the end, but I thought it was fine. Not nearly as lemony as I expected -- not in a bad way, just not a strong lemon flavor.

Kielbasa with Peppers and Potatoes
This will probably become a staple at our house. It's easy and flavorful. I added 3 cloves of minced garlic and a sprinkle of onion powder. Chopped onion would be good in it, too.

Beef Tenderloin With Roasted Shallots
Wow, very tasty! Definitely good for when you have guests over for dinner, or if you're really in the mood to cook. The meat just melted in my mouth.
