Blueberry Pumpkin Muffins

These are delicious. I use 1/2 cup of whole wheat pastry flour and 1/4 cup all purpose flour and reduced-fat buttermilk for the milk. I sometimes substitute chocolate chips for the blueberries or banana for the pumpkin. Always turns out great.

I'll be sticking with the Yakisoba Chicken recipe on this site, which is similar but much more tasty and the ingredients are more in proportion.

Kay's Spaghetti and Lasagna Sauce

Husband loves with a few minor changes: add 1 lb of spicy Italian sausage in addition to ground beef(spice and sweet offset each other), use only 1 pepper and 1 onion, and add 1 can of paste. No need to put in blender, but cook all day in slow cooker. Very good, makes a ton of food.

Paprika Chicken with Mushrooms

Very good! I recommend using hot paprika for a little kick. I also used half the mushrooms (even though I love them) and chicken tenderloins (from Costco). Sprinkle the spices liberally instead of measuring.

Jamaican Me Crazy Chili

Look no further for a chili recipe - this is the best! Be sure to use hot paprika because it makes this dish. I add a little extra spice by measuring a heaping tablespoon each of chili powder, cumin, and hot paprika. We also prefer one large onion and one medium yellow pepper. I now also add 1-2 tsp of jalapenos for an extra, tasty kick. We like it spicy! Leave out the extra sugar if you want it less sweet.

Coconut Curry Fish

My favorite curry recipe on this site so far. Delicious! I will try with chicken next. This dish does need a lot of salt! It will taste bland if you don't add enough. Try it.
