About this Cook
Ilove food, all types and cruisine and enjoy cooking. I live in the Bahamas (Nassau) family has alway enjoyed good eating so I became interested in cooking and baking at a very early age and spent lots of time in the kitchen helping my mother and grandmother. I cook or prepare 95% of what I eat (hardley ever eat out)so I'm always thinking up a meal or preparing a meal.
My favorite things to cook
Vegetables are my favorite things to cook. There are so many to choose from and ways to prepare them are endless. Vegetables can be a main dish, side dish, soups added to meat, pasta, rice, whatever! , Beans (all), Potatoes, Broccoli, Cabbage and Squash are my favorites.
My favorite family cooking traditions
My family's favorite dishes - the ones that are a must at any family gathering is Broccoli casserole, Baked Macaroni & Cheese and Seafood. Good hearty soups are also big on our list.
My cooking triumphs
Well I'd have to say everything! My family and friends enjoy everything I fix. I've successfully converted many a non-veggie eaters. But my cakes and breads are probably most in demand - Christmas Fruit Cake, Banana Bread, Corn Bread
My cooking tragedies
In recent years, I've really not had any (yippee!) But I will never forget my first attempt at Peas 'n Rice (14rs old) it was a disaster. Too much much water was added! My folks said it tasted good though, just to soft. Which was good encouragement.

Kidney Beans and Corn
I just made this. WOW!!! Easy & Quick. Tastes good and looks good. I used items I had on hand as follows - didn't have red onion used white, added green and red peppers, used 1 tsp. regular mustard, and spiced it up with cayenne pepper, italian seasoning, salt & black pepper. Followed everything else. This will be a regular for me. Perfect with rice.

A Plus Fair Corn Dogs
A-W-E-S-O-M-E !!! I followed the recipe, didn't change a thing. I took one reviewer's advice and used a tall container and dusted in flour before battering. My family really enjoyed these. We will definitely be making these regularly.

Spaghetti with Corned Beef
I love this! The best thing is that you can customize it to your liking and use any type of pasta - elbow, macaroni, or shells. Quick and tasty. I didn't give it 5 stars because I used bottled spaghetti sauce.
