About this Cook
I'm a stay at home mother of 2..a 4yr old son and a 2yr old daughter. My husband is libyan/egyptian and we recently moved here to egypt to try it out and we're loving it along with the food!! I love a good food challenge..and cooking has become one of my passions since having children(although finding the time is difficult with my busy babies!)
My favorite things to cook
A whole new world of cooking opened up after marrying my husband..middle eastern cuisine has become one of my favourites..sambousa(pastry stuffed with ground beef), masaa(eggplant baked in a tomato sauce) and many more! Two years ago I started a gourmet basket business..toffees, baked goods, antipesto, hummus, and flavoured butters were among the many contents..most of the recipes I got from allrecipes!
My favorite family cooking traditions
Cooking is a new found love for me..and all of my husbands sisters are very passionate about cooking...family gatherings consist of maashi(rice and beef stuffed zuchinni, grape leaves, and eggplant), macarona bechamel(a lasagna made with a bechamel sauce) and many more wonderful dishes...I'm hoping to master these dishes and carry on the great gatherings years to come!!
My cooking triumphs
I think I would have to say middle eastern food...it's such a great feeling to make a traditional egyptian or libyan dish and to hear how proud they are of me!! Rice was always a challenge for me..but now I've been told that I make great rice no matter what type..basmati, long grain, or egyptian.
My cooking tragedies
I've had many!! Making toffee was such a challenge..sometimes it would turn out to be a big blob of goo..other times I would burn it...you name it!! We spent all of last summer here in Egypt and cooking here was difficult because the food available here is alot different than north america..the flour is different..and I tried to impress the family with homemade bread..it tasted like cardboard and I threw it in the garbage. I was brought to tears a few times out of frustration!Thankfully all purpose flour is now available here and they actually have BIG groceries stores with alot more imported american food!!

Rayna's Freezer Antipasto
This antipasto tastes just like the store bought kind found in gourmet shops! Not only does it taste great, it's easy and fun to make! Everyone begs for the recipe once they've tried it! Thanks Rayna!
