Chocolate Covered Marshmallows

I thought these were great! It was a little too much marshmallow for us, so I cut them in half. I melted chocolate bark in the microwave (stirring every 30 seconds) and dipped the marshmallow halves in the melted chocolate. Then into graham cracker crumbs, like Jeannette H. suggested. They were like little smore bites! We'll definitely be making them again!

Crustless Spinach Quiche

This was a great and easy recipe, we really enjoyed it. I used egg beaters and I skipped the onions since I don't like them. I didn't saute the spinach in oil, I just pressed the excess moisture out with a fork. I used garlic salt and 2% mexican cheese (the one with taco seasoning in it. Then put some of the quiche in a tortilla. It was excellent. Great for a breakfast on the go. I will DEFINITELY be making this again!

Surprise Apple Salad

A friend of mine made this for a gathering and I just love it. She is like the others that add the pudding mix. Vanilla is definitely the way to go. She didn't add any cream cheese and that kept it lighter and not as heavy. I used fat free cool whip and only 2 snickers bars (which I thought was plenty). I like using granny smith apples to add a little bite.

Black Bean And Corn Salad II

This was awesome! I used mostly fresh lime juice(didn't get enough limes)and fresh cilantro (make sure it's finely chopped). We added a little apple cider vinegar to the leftovers so that it will keep better and to add a different flavor. This is definitely a keeper!! Edit: I've been making this as a salsa instead of a salad. I skip the olive oil completely now. I get a fresh tomato salsa from Sam's (it already has onion and cilantro) and then just add the other ingredients in. It saves SO much time. I use equal parts corn (frozen) and black beans. It is excellent on pretty much any mexican food. I even find myself putting it on my Taco Bell tacos!

Grilled Pizza Wraps

Since I'm pretty much obsessed with any form of pizza, I've been making these for years. I use mozzarella, store brand pizza sauce (which I like better than the brand name), and turkey pepperoni. I use cooking spray instead of butter. I sometimes eat these as a wrap, cold with fresh tomato, kind of like a pizza lunchable (some think it's gross, but I like it) and also pop them in the toaster oven or microwave.

Braised Balsamic Chicken

I thought this was really good. I've made it twice so far. The only things I did different was use less spices and I cut up the chicken. I'm not a fan of cooked tomatos, so I think maybe next time I'll use fresh and only cook them for a little bit.

BLT Dip

My sister has made this dip for years. It is excellent and so easy to make! I always use reduced fat mayo and/or reduced fat sour cream. I also add A LOT more tomato and have shredded lettuce with it. I serve it with toast triangles, wheat thin chips, melba toast, and for the carb conscious-sometimes I just use leaves of lettuce.

Easy Italian Sausage Lasagna

This was really easy to make. To cut down on the fat, we didn't use sausage and used light ricotta. We also mixed some chopped spinach in with the ricotta and used italian blend cheese instead of just mozzarella. It was delicious!!

Artichoke & Spinach Dip Restaurant Style

I loved this recipe, it was so easy and delicious! My boyfriend and I don't like artichokes, so we put in extra spinach. We used light alfredo sauce, light cream cheese, and italian blend cheese . We ate it with store bought pita chips, they were ok, next time we'll eat it with pieces of fried tortillas. I can't wait to make it again!
