About this Cook
I live alone and sometimes it's hard to get myself to cook for myself. I'm really trying to break away from the whole "Oh, I'll just grab something on the way home from work" mentality. I love cooking for my boyfriend though, so I try to do so every time he comes over.

I tend to not thoroughly read recipes. On more than one occasion I end up using a tablespoon of salt instead of a TEASPOON!!

Chocolate Covered Marshmallows
I thought these were great! It was a little too much marshmallow for us, so I cut them in half. I melted chocolate bark in the microwave (stirring every 30 seconds) and dipped the marshmallow halves in the melted chocolate. Then into graham cracker crumbs, like Jeannette H. suggested. They were like little smore bites! We'll definitely be making them again!

Crustless Spinach Quiche
This was a great and easy recipe, we really enjoyed it. I used egg beaters and I skipped the onions since I don't like them. I didn't saute the spinach in oil, I just pressed the excess moisture out with a fork. I used garlic salt and 2% mexican cheese (the one with taco seasoning in it. Then put some of the quiche in a tortilla. It was excellent. Great for a breakfast on the go. I will DEFINITELY be making this again!

Surprise Apple Salad
A friend of mine made this for a gathering and I just love it. She is like the others that add the pudding mix. Vanilla is definitely the way to go. She didn't add any cream cheese and that kept it lighter and not as heavy. I used fat free cool whip and only 2 snickers bars (which I thought was plenty). I like using granny smith apples to add a little bite.
