About this Cook
I'm a teacher and wife, living in Brooklyn, NY. I am also a self-professed foodie, and living in New York makes it really easy to try different types of food. While I am open to all types of food, I try to cook mindfully, watching the ingredient choices. I love to swap out some ingredients and put in others that would taste better, adding my own flavor to things.

I love cooking all italian dishes and soul food the most.
My favorite family cooking traditions
One of my favorite traditions is one that was passed down from my mother to me: husband as sous-chef. I taught my husband how to execute a collard green chiffonade, and he's now awesome at it. My husband said that he had never eaten collards before he met me. Now, he eats them all the time! So, as our family grows, I am going to love involving everyone in the cooking process somehow. :)
My cooking triumphs
making low-fat and low-sodium gumbo! People love it, regardless of what they "claim" they don't eat or like. Who says lowfat can't be really tasty and decadent?
My cooking tragedies
One year for Christmas breakfast at my sister-in-law's house, I made these really, really (really!) salty eggs. I misjudged the amount of eggs I was making and oh boy, were they salty! People could barely eat them. How kind they were to even try!

Breakfast Casserole III
Mmm...yummy! I cut the recipe in half and seasoned the eggs instead of placing seasonings on top. Since I was using cheese leftover from Macaroni & Cheese, I added mozzarella and american cheese to the mix. Breakfast felt so decadent and fancy, but it only took a little while to make. I'm sure that the leftovers will pack well for those breakfasts on the go during the week too...

Fried Chicken Tenders
quite tasty! I adjusted the spices a little to include a bit more salt. I also seasoned my breadcrumbs with some more italian spices. It was dee-lish, and I'll be making some tonight.
