Swedish Cream Wafers

Excellent! Takes time BUT well worth!!! Followed recipe exactly with no substitutions. (The egg yolk is not going to hurt you.) Make sure to double the filling. My children make this with me during the holidays and it is now a family tradition!

Penne, Tomato, and Mozzarella Salad

Made as specified, it was bland. Added 1/2 cup balsamic vinaigrette and it was much better. Like one reviewer, salad to me, should be cold ... the tastes melded much more after the salad sat a bit in the fridge.

Flourless Chocolate Cake II

WOW!!! Family loved this and didn't even know it was gluten free! Followed suggestions of MommyFromSeattle and will definitely label this as THE chocolate cake to make when asked to make chocolate cake. I used Ghiradelli 60% cacao bittersweet chocolate chips instead of cocoa powder. Topped with hard chocolate glaze recipe. Very elegant looking and the glaze firmed up nicely.

Pumpkin Bread

Didn't change any ingredients. Only changed total baking time to 80 minutes as it did over-bake the bread a bit. A definite go-to recipe for pumpkin bread anytime during the year but ESPECIALLY during the fall.

Slow Cooker Turkey Breast

Great aroma while cooking AND great tasting!! Additions I made: (1) melted butter to add to the soup mix then rubbed into the turkey, and (2) added half can of beer since I always crock-pot meats with some liquid. This made just the right amount of liquid to thicken into a gravy before serving.

Vegan Brownies

Was a hit at our party (both for dairy-free and non-vegan eaters)! Followed other suggestions: increased the cocoa powder by 1/4 cup; substituted the 1 cup water with 1/2 cup strong coffee and 3/4 cup water; substituted the 1 cup oil with 1/4 cup oil and 1/2 cup unsweetened applesauce; AND added vegan chocolate chips (about 1 cup). I baked the brownies for a total of 45 min after first checking at 30 min and increasing the time by 3-5 min until toothpick inserted in the middle came out clean. Did NOT come out oily. No one could tell they were any different than regular boxed brownies! Will make again since I have another bag of vegan choc. chips.

Yakisoba Chicken

Very good!! Didn't want to bother with the carrots so left them out. Used half bag of shredded cabbage ... will use more next time. Had to bring down the heat of the chili paste by adding about 1/4 cup chicken broth. Spicy but very tasty!! Will make again since kids loved it (less heat, though).

Simple Country Ribs

WOWEE!!! After I modified it to serve 6, used 5 lbs of pork spareribs and it turned out finger-lickin' good! My husband grilled the ribs BUT did not baste it and it came out very tasty. This recipe is a definite KEEPER for my picky family of 5!

Asian Rainbow Trout

Substituted olive oil with sesame oil like was suggested by another reviewer. This really made this dish tasty and very Asian-like. The blend of the seasonings/ingredients worked well together. My family loved it and will definitely make again.

Pumpkin Cheesecake in a Gingersnap Crust

Never made this fancy kind of cheesecake before. But was pleasantly surprised with the result! Will definitely make again!! Listened to others suggestions: make CERTAIN to use a waterbath when baking; used 4 T of butter; used 1/4 c ground hazelnuts; added 1/2 t nutmeg. Will try another suggestion when I make again: bake for just over 1 hour, then turn oven off for final 30 min. This should make the texture more creamier. Absolutely best if eaten the following day after being in the refrigerator!

Comforting Chicken

Great, easy, fast recipe! Perfect for a cold night. Used red pepper as I didn't have any green ones. Sprinkled garlic powder since we LOVE garlic. Baked for only 50 minutes since the top was becoming crunchy hard. My family loved it and will definitely make again.

Pasta Pomodoro

A very easy and light summer dish. The balsamic vinegar is needed to give it that light, summery taste - don't exclude that! Added cooked shrimp for the last 2 minutes and the family loved it! Also used a bit more chicken broth than called for. I didn't experience too much pasta like many reviewers claimed, maybe since I used more broth.

Chewy Brownie Cookies

Yummy cookies! Didn't change a thing except baked them for 11 - 12 minutes AND cooled them on the sheet for about 5 minutes BEFORE transferring them to a cookie rack. When baked at the recommended 7 - 9 minutes, the cookies were half-baked and fell apart.

Blueberry-Lemon Pound Cake

Wonderful pound cake recipe … just the way a pound cake should taste! Not too sweet and yes, it’s heavy because it calls for all that butter; and isn’t pound cake supposed to be on the heavy side anyway? I added more lemon juice than it called for to give it more of a zesty lemon zing – yum! Family definitely LOVED this and will absolutely make again!!!
