About this Cook
I work full time outside the home so cooking has to be quick and easy. When I have time, I will spend all day in the kitchen making elaborate meals.
My favorite things to cook
Anything!
My favorite family cooking traditions
Having the family in the kitchen with me. For teacher gifts for the holidays, we bake about 10 cheesecakes of various types to take to the teacher's lounge about a week before the holiday begins. My 2 kids get very involved in this too, quizzing the teachers about their favorites and doing the actual baking and decorating.
My cooking triumphs
This past Christmas dinner for 20 people - and all the recipes came from allrecipes.com!
My cooking tragedies
Curried shrimp after I had been married less than a year - YUCK!!! And I love curry!

Thai Coconut Chicken
I agree with the person that says this is a good base recipe. I added salt and minced garlic to the chicken with the initial curry powder. With the coconut milk, I added some chili powder and some more curry powder. It would have been very bland without the extra additions. I have to say that my son and VERY picky teenage daughter liked it (my son loved it).
