Chive Cucumber Salad

I thought this recipe was pretty good. I substituted the sour cream for nonfat greek yogurt and left out the water. Overall, a nice refreshing salad but too plain to stand on it's own. I liked the person's suggestion to serve with an Indian meal!

Stewed Cabbage

This dish was surprisingly good! I'm generally not a fan of cabbage but received a small head of it in my bi-weekly farmer's market delivery and couldn't let it go to waste! Rather than use the full amount of butter I added 1/4 cup of vegetable broth and 1 tbsp of butter... I will definitely be making this one again!

Chicken Breasts with Balsamic Vinegar and Garlic

Unfortunately, I didn't have any mushrooms on hand so I didn't include them. I think the recipe would have turned out a lot better with them. I'll be sure to give this one another try.

Easy Paella

I was always intimidated to make paella, but this recipe made it so easy. My boyfriend absolutely loved it! This one is a keeper!

Albondigas Soup I

I just made the soup today! I absolutely loved it, I followed the instructions to a t, except I did add some cumin to the meatballs. I also added cilantro at the end to garnish... I will definitely be making this again! However, next time I may consider low sodium beef broth... =o)
