Albondigas Soup I

my boyfriend is mexican and had been begging me to make this soup. He loved it but I thought it was just ok...it needed more spice. I added carrots and celery,but I think I will do an Italian Wedding meatball next time, with spinach and the small pasta.

Joelle's Famous Hot Crab and Artichoke Dip

I tweaked this recipe a bit: I didn't add white cheese and I used all fat-free ingredients and added hot sauce and jalepenos to make it spicy! Great with a loaf of sourdough on a cold night.

Double Tomato Bruschetta

Great bruschetta! I use this one for my caterings! Also try substituting some ingredients with cooked asparagus-yummy!

Nutty Stuffed Mushrooms

These were okay. I have had better reviews from just combining garlic butter, bread crumbs, and parmesan. For some reason these just didn't wow me.

My boyfriend loves this dish! It is one of his favorites. I have also made it low-fat using f/f cottage and feta cheese as well as spray butter. It still tasted great. Very rich and heavy, so serve it with some light veggies or a salad.
