Chicken Florentine Casserole
I used chicken breast tenders and frozen spinach (thawed both first) for this recipe and skipped the first step. I baked for 30 minutes at 350 and served it over angel hair pasta. It turned out great! I had leftovers for lunch the next day and it was still yummy. Thanks for a keeper!

Brown Sugar Meatloaf
I followed the recipe except put the glaze on top. It tasted like a hamburger patty with a sweet glaze on it.

Shredded Beef Enchiladas
I cheated a bit on this recipe and used leftover shredded beef, then followed the recipe - until I got to the tortillas and used the flour tortillas since that is all I had. It had a great flavor but lacked the texture I know the corn tortillas would have given it. I can't wait to make it again and do it right! This is definitely a keeper.
