Boilermaker Tailgate Chili
I have tried several chili recipes from Allrecipes and they are all good. But this one is wonderful. I think I followed the recipe exactly except for the cayene - didn't have any, so I substituted chipotle instead. Then I cooked it all day in the crock pot on low. Having lived in Albuquerque for over 20 years, I needed a little more kick, so I added a pile of nacho-style jalapenos to my bowl, since my wife doesn't like them. This is now "my chili". The best I hace ever tasted.

Kona Chicken
I tried this tonight and it was a hit. I pretty much followed the recipe. I used chicken thighs I had, added a heaping tablespoon of minced garlic and, as an afterthought, dumped in a small can of crushed pineapple with the juice. Cooked it on low in my crock pot for precisly 5 to 7 hours. It was quick to prepare and very easy. Will definitely make again.

Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta
I made a couple of changes suggested by others. I added fresh sliced mushrooms sauteed in oilive oil and a small bag of slivered almonds for a little crunch, otherwise, I followed the recipe as written. The chicken was a little dry, but the filling made up for that. Easy to make and a delight to the eye and the palate.
