Corned Beef Hash

this was fast, easy and delish! i used about 6 oz of left over corned beef brisket which i cubed, 1 medium sized potato cubed, 1/3 onion chopped. i put it in the skillet, added i cup beef broth, covered it and 15 mins later the liqued was gone and everything was done. i added about a tsp of oil and crisped it up a bit and served with eggs over medium. this ratio made 2 very generous servings.

Boston Cream Cake

I hate "cake-from-a-box" but this was terrific!!!. I used reduced sugar cake mix (used applesauce instead of oil), fat-free sugar free pudding (used only 1 1/4 skim milk - perfect)and reduced sugar frosting. It didn't taste like a cake from a box nor a low fat/low sugar dessert. I highly recommend this recipe for a quick and easy dessert!

Pumpkin Spice Cake with Cinnamon Cream Cheese Frosting

This was excellent! I used reduced sugar yellow cake mix and added a small box of sugar free vanilla pudding and about 1/2 cup of water. Otherwise, I followed the recipe (did increase the spices though) and baked it in a bundt pan for 39 mins. After it cooled I drizzled it with a cinnamon glaze (confectioners sugar, half-n-half, cinnamon) My family devoured it! It was moist and flavorful; it didn't taste like a cake mix creation.

Sloppy Joes II

I only gave this 3 stars because it did require some "doctoring". I browned the beef with 1/2 chopped onion and one minced garlic. Then added the rest of the ingredients as listed, ecept using only 1 tsp brown sugar. I had to increase the ketchup to about 1 cup, increase the mustard by about another tsp. and add some water. The flavor still wasn't quite right so I added 1/2 tsp Italian seasoning, 1 tbl barbeque sauce and some hot pepper flakes. It ended up being pretty tasty - my husband couldn't tell that it wasn't the canned stuff ( I don't know if that's good or bad!)

Best Peanut Butter Cookies Ever

this really didn't work for me. the flavor was ok, but the texture was weird. also the cookies were breaking apart when i tried moving them to the cooling rack. i used splenda instead of sugar - perhaps that's the reason it didn't work, though i've never had a problem using splenda with any of my baking.

Braised Beef with Barley

Very tasty! I made some minor adjustments given the reviews and ingredients I had. I used 2 6 oz cans of sliced mushrooms instead of fresh and I used 24 oz. of beef boullion instead of canned broth. Next time I will only use 1 can of mushrooms or use fresh. I also don't think you need 2 cans of broth. After 45 mins, the barley was done but there was way too much liquid so I had to turn up the heat, and cook without the lid for about another 20 mins or so to reduce the liquid. I also didn't add the peas, just steamed some green beans on the side.

Peanut Butter Cornflake Crunch Bars

my husband begged me to make this as this was something he had everyday as a child...i followed the recipe exactly, however only used 7 cups of cornflakes..it wasn't as thick as my hubby remembered so next time i will increase the ingredients to make a full, thick 9x13pan...yummy!

Bar Cookies from Cake Mix

pretty good! per other reviews i used 3 eggs and 3 tblsp water...i also used reduced sugar chocolate cake mix, splenda brown sugar, pecans and chocolate chips...the batter was VERY thick and wasn't sure if this would work...i did have to bake for the full 30 minutes because at 22 min it was still uncooked...it wasn't dry,it was very moist, however next time i think i will either use more butter or add some oil to make it less cake like..

Italian Breaded Pork Chops

I had fairly thick cut,boneless chops and was looking for a recipe that wouldn't dry them out. This is a great recipe! I followed the advise of others (reducing bc and dredging in flour 1st) but otherwise followed the recipe exactly. My husband who always complains about dry chops, said it was really, really good :-)

Beef Pot Roast

Not too bad! I followed the recipe exactly except after the 1st 30 minutes I added 1 cup beef broth, however I really don't think that it needed it. The meat was tender and not dry at all.

Simple Salisbury Steak

i used worchestershire sauce instead of browning sauce and parm. cheese instead of bread crumbs. i also added some steak seasoning to the meat. the flavor was great but i too had some problems keeping the meat to together. the next time i don't think i will add the soup to the meat. otherwise the family loved it!

Restaurant-Style Coleslaw I

Perfect slaw! I used splenda instead of sugar and omitted the buttermilk (i didn't have any). I mixed everything together as directed but added a little more milk to obtain the right consistency since I didn't have buttermilk. It worked perfectly!

Seven Layer Bars

these are perfect! the only change i made was i poured the swntd. cond. milk over the coconut. i baked them for 25min and while still hot i ran a knife along the perimeter to pull the cookie away from the pan. i let cool completely before slicing. they came out perfect!

i followed the recipe except i used splenda instead of sugar and used a 8 x 8 pan like others suggested...my husband took one look and said - "what is this, a moon rock?" can we say DRY, DRY, DRY? don't even bother with this one!

Best Ever Meatloaf I

I added about a quarter cup of parm. cheese and used v8 instead of tomato juice. The last 45 min of baking I topped it with a ketchup, mustard, brown sugar, A1 sauce. My husband said it was the best meatloaf ever (he had no idea that it had oatmeal in it either!)
