Company Potatoes

For all the trouble, it wasn't anything special. It wasn't bad, it just didn't wow us. One tip I would like to add: it didn't say so in the recipe, but I treated the hash browns just like I would thawed spinach. I made sure I squeezed a lot of the water out, because I was afraid it would be too "soupy" if I didn't.

Southern Peach Cobbler

Very good! Very easy! As long as I keep a can of peaches in the cupboard, we can have dessert anytime. I would like to tell you how it was leftover, but there wasn't any left when I got up this morning. Everyone had some after dinner, and then it disappeared overnight! Thanks a million for sharing this easy delicuous recipe!

Mock Filets

My family loved this. I did use the pre-cooked bacon as suggested, and that worked really well. Also, I think if you have trouble with the patties being "dry", you may be using ground beef that is too lean. I used 80/20, and they were delicious! Thanks for sharing

Quick and Easy Chicken

This was wonderful. I will make this again. As recommended by other reviewers, I doubled the sauce, and I only added 1/2 tsp of pepper. I also cooked it for about 40 minutes, and I disolved a spoonful of corn starch in about 1/3 cup of cold water and added right at the end of cooking. This made a nice thick sauce. I made rice and broccoli as recommended. After dinner, I just put all the leftovers, (chicken, sauce, rice, and broccoli) in one bowl and brought it for lunch today. It was really good all mixed up too! Thanks for sharing this recipe!

Sliced Steak Pizzaiola

What a waste of a good piece of meat. I should know better than to use an unrated recipe. Making this for dinner last night made this clear. There just wasn't a lot of flavor. It was a bland unseasoned steak with canned spaghetti sauce poured over it. (Guess I should have gotten that when I read the ingredients, but I was optimistic. Won't make that mistake again.) This was is NOT a keeper.

Shrimp and Crab Enchiladas

This was wonderful! I did add 4 oz cream cheese to the crab and mixed it well, then added the shrimp. (I also used 2 cans of crab.) Other than that, I followed the recipe. Very filling and a little rich, but excellent! I would serve theses to company. Thanks for sharing!

Beef-Stuffed Squash

This was really good. Here's a quick tip about cooking acorn squash. I pierce the skin (leave them whole) and cook them in the microwave on high power. Time depends on the size of the squash, but I always start with five minutes, adding a minute or two until they are done. (When the outside is soft to the touch, they are done.) Then, I halve them and scoop out the seeds. This will save A LOT of time in the cooking process.

Deli Style Brisket

This was really good, and I would make it again. I have to admit that I am not a huge brisket fan because of all the fat, but my husband loves it so I try to make it for him once in a while. It's nice to have a change from the regular old corned beef and cabbage style. Thanks for sharing!

Moroccan Salmon Cakes with Garlic Mayonnaise

Just didn't care for this. There was no fish flavor. Most of what we tasted was garlic. I made it by the recipe, and was very disappointed. They came out looking great, but that was it. One tip for anyone having a problem keeping them from falling apart - be VERY sure that you spinach is well drained. I take small dollops and squeeze the water out of them. I think this may have been the problem!

Very good. I also added some frozen peas. A good alternative to rice and gravy for those watching their calories. I served it with a fish dish, some steamed broccoli, and crusty rolls. It felt very healthy!

Baked Dijon Salmon

This was very good. We are trying to eat more fish, and I can say I will make this again. The only thing I will do differently is to cut the honey/dijon/butter mixture ingredients in half, and I think there will be plenty to spread a thin layer over the fillets. (I ended up throwing away some of it.) Thanks for sharing.
