Spanish Rice II

Followed the recipe, except I used a jar of hot salsa instead of the diced tomatoes. It turned out deliciously spicy. Next time I'll throw some seafood in there.

Light PHILLY 20-Minute Skillet Salmon

A little salt and some lemon juice helped this a lot. They should not have been left out of the recipe.

Left out the garlic and onion as I'm pregnant and can't stand the smell. Otherwise, stuck to the recipe and it was AWESOME! Hubby and I both agreed it was still delicious even without the beloved garlic and onion.

Pebber Nodder (Danish Christmas Cookies)

I halved this recipe because I'd never had them before and was reluctant to have 100 cookies we weren't excited about. However, they are really good and I love how they are tiny and bite-sized. Delicious and cute and easy to wrap up for a tiny gift for the neighbors at tea time :)

Cardamom Cookies

The dough was too sticky to roll so i just spooned them out and flattened each one individually. I left out the almonds, so perhaps that is why. I made them once with double the cardamom and still thought it was too subtle, so made them with triple. Very pleasant cookie.

Greek Orzo and Broccoli

Orange Pumpkin Loaf

This is SO yummy! I wanted to use up a can of mikans so I substituted those for the orange. This made the loaf very moist, maybe a bit too moist. I also left out the nuts because I don't like them. Even so, it is absolutely delicious and I will make it again very soon.

Tomato Spinach and Basil Soup

We loved this soup! I added some chicken broth to thin it a bit but otherwise stayed true. Will definitely make again.

Spinach Pancakes

We found these pleasant, if a little boring. I added garlic and parmesan cheese and put sour cream on top. They could still use a little jazzing up and next time I may try the feta tip or else make them spicy.
