My favorite family cooking traditions
My mother is a great cook. My favorite dishes by her are spinach and spicy sausage lasagna, cheesy broccoli casserole, green chili chicken enchiladas and frozen mocha cheesecake. But really everything she makes is awesome!

Spanish Rice II
Followed the recipe, except I used a jar of hot salsa instead of the diced tomatoes. It turned out deliciously spicy. Next time I'll throw some seafood in there.

Light PHILLY 20-Minute Skillet Salmon
A little salt and some lemon juice helped this a lot. They should not have been left out of the recipe.

Chicken Tortilla Soup V
Left out the garlic and onion as I'm pregnant and can't stand the smell. Otherwise, stuck to the recipe and it was AWESOME! Hubby and I both agreed it was still delicious even without the beloved garlic and onion.
