Calico Beans

Love it. I cook it on the stovetop - simmer for 30 minutes or so. I add some water because my first batch turned out thick and pasty. 1/2 cup to 1 cup of water does the trick. That's in addition to the 1 C ketchup other reviewers recommend; definitely add that. It turns out great - I've already had recipe requests. It's the only way I'll eat lima beans (butter beans work, too). My hubby thinks the limas are essential because of their starch and their shape holds the sauce well.

Cherry Almond Coffeecake

Good - I made my own cherry sauce from canned cherries. Good flavor. Scored less becasue I think the best would have more homemade flavor and texture, but it was good for an easy recipe. The bottom of the cake was wet the second day - fridge it to avoid that problem.

Jammin' Beef Stew

Great stew - I'm going to try celery in it next time. My kids are already protesting this alteration. The jam seems odd at first, but think of the grape jelly as a touch of wine and sugar - the sugar helps tone down the acidity of the tomatoes, and the grape flavor is like what wine might add to the flavor.

Swedish Meatballs I

I used bread crumbs in place of cream of wheat. I added a dash of nutmeg to the sauce. I froze this for later use and it was great.

Curried Cauliflower

My husband hates mayo - didn't recognize it in this dish and he thought overall it was great. I followed some reviewers instructions and increased the curry amount to 1 TBS; I thought it was a bit too much but hubby loved it. Since nothing is raw, I think it's best to taste test the mixture before adding addl spice. I also skipped the crumb topping.

Apricot Pork Chops

I didn't think this could be good cause I'm used to more prep work - turned out great. My 1 lb. of boneless chops were cut 1/2 inch thick and they were a little overdone in 30 minutes (thickness of chops relates to cooking time, so there can be a great deal of variation - and I think that may be the cause of some of the other reviewers' dissatisfaction). I used 1/2 the sauce recipe on 1 lb of meat and there was plenty to go over brown rice. I used russian and pineapple-apricot preserves (some other reviewers suggest variations, so that's mine). Not "the best", but very good; will repeat.

Chinese Happy Family

Good easy recipe I've made more than once. I'm giving it 3 stars because it's neither the best nor very exciting to the palate. It tastes good and easy to keep the ingredients on hand. Look for a bigger bag of stir-fry veggies that includes bell peppers and baby corn and you're don't even have to spend the time cutting/opening cans of those.

It was okay - I found it very peppery, which I think came from my bottle of salt-free garlic and herb seasoning blend. I'd probably try it again with half as much seasoning blend. Otherwise good.

Creamy Lemon Pie I

This is an easy pie, not a gourmet pie, so you have to know what you're getting into and rate it on that basis. As such, I think it has a great flavor and texture. I'm a huge lemon fan so I added lemon zest (it will really heighten the lemon flavor without adding unwanted extra liquid), I did increase the juice to 1/2 cup, and reduced the whipped cream amount to 8 oz. I know that's a lot of changes, but that's what makes this a great easy recipe - you can tailor it to suit your taste without disastrous results. Give it a try.

Sun-dried Tomato, Feta and Pine Nut Salad

Fabulous salad. I admit I have never appreciated croutons. . . until now. I think making your own croutons is totally worth the effort (what effort? 5-10 minutes is all it takes). They are great, the salad is great. I do not brown nuts under the broiler after catching some pecans on fire using that method a few years back. Instead, I toast them on the stovetop in a pan without oil, over medium heat. That way I can watch them more carefully, turn them easier, etc.

Vietnamese Fresh Spring Rolls

Great dish I've enjoyed in restaurants. I like the herbs used in this version, although I don't use Thai basil cause I don't know where to get it yet - I use a little extra mint and cilantro. I didn't like the fish sauce dip (though I do like it at restaurants), but thought the hoisin-peanut mix was great! Sometimes I add chopped cucumber.

Olive Chicken II

Great dish. The olives mellow considerably as they cook. I skipped the white wine and added additional chiken broth to replace the liquid. I also used canned diced tomatoes. I have been making a version of this for years that involves breading and frying the chicken before simmering it - I like the ease of prep on this version. My other version doesn't include tomatoes - it's good both ways.

Asian Lettuce Wraps

Great recipe. I like the crunchiness the waterchestnuts add. It is a bit involved but very good. For something less involved without sacrificing flavor, try Oriental Express Beef Lettuce Wraps on this site. I serve this with Sri Racha chili sauce and white calrose rice on the side for filler.

Olive Salad for Muffalettas

I found a great improvement in the taste by using the kalamata olives in place of the black olives (Mezzetta brand has a pitted version so you don't have to deal with pitting them; I'm sure there are others). I also used marinated veggies (bottled giardiniera) in place of artichoke hearts, personal preference. I had to look up a muffaletta sandwich online to complete this sandwich. The basic version contains lettuce and tomato, ham and salami, provolone and of course this olive salad. It's fabulous!

Chewy Peanut Butter Cookies

I used the eggs for a lovely cookie. Mine baked up in a 350 oven for 9 minutes and came out soft, the way I like them. I added 1/4 tsp salt after my first taste test. Watch your placement on the cookie sheet - in my case the dough balls seemed to double in width as they baked. A great cookie.

Italian Wedding Cookies III

Great cookies. I can't say they taste much different from my other standby recipe, but they did bake up much firmer. I made the balls teaspoon size, which is smaller than I have before, so that may have made the difference. I used salted butter and used only 2 tsp of vanilla. I read that someone wore out a small machine grinding the almonds; use the blender - it's sturdy and will get the job done. I'm not sure what to think of the reviewer who made these without nuts - the nuts are a key ingredient for taste and texture. Yum!
