Mother of 4, SAHM and Latter-Day Saint. Degree in Socio-cultural Anthropology, which brings more foreign interest to my cooking.
My favorite things to cook
I like to eat foreign foods: Indian, Thai, Vietnamese, Mexican, Greek. I am most on the lookout for these things for dinner. I have no idea how to make a casserole. I also like ways to use dried foods and like freezer meals are intriguing. Also a known fan of baked goods. Some interest in frugal cookery.
My cooking tragedies
As a teen my best friend and I made cookies. The butter wasn't at room temperature when we needed it so we microwaved it and added it to the sugar and eggs. We noticed the strange lumpy texture of the ingredients but figured we could beat it fluffy and proceeded to mix and bake them. When said friend's brother bit into one and nearly choked on it we were forced to review our technique. The microwaved butter must have been hotter than we realized, because there were bits of cooked eggs throughout our cookies. The creamy mixture hadn't curdled; we had just invented a new method for scrambling eggs!

Easy Meatloaf
Good, some tang to it. I doubled the recipe and mixed everything together rather than make the outside sauce. Sauteed the onions and added worchestiershire as recommended. Baked it in a 9x13 pan at 380 degrees for 50 or so minutes. Yum.

Easy Chocolate Ice Cream
Very yummy with few steps. I have had better chocolate ice cream, so I'm not rating it 5 stars, but it is close. I made mine in my ice cream maker. One important tip: refrigerate your canned sweetened condensed milk and your chocolate syrup ahead of time so you get the ice cream colder quicker than using those items at room temperature.

Vanilla Ice Cream V
I made it a few days ago and added chocolate sandwich cookies to make cookies n cream flavor. Finished texture was a little flaky rather than smooth, but great flavor. I'm making it again and will whip it at intervals while I'm hardening it to try to get a smoother texture. If I succeed, I'll give it 5 stars.
