Zucchini Cornbread Casserole
I have made this 3 times now and now I get requests for it. My hubby takes the leftovers in his lunch. Tastes great cold even!

Hamburger, Potato, and Kidney Bean Casserole
I chose to leave out the bacon.and used prepared frozen hashbrowns to save time. Added some garlic and spices and served with a dallop of cream cheese on top. It was a hit with my husband.
