First of all, this was easy to make- always a plus in my book. And I like that it used pretty healthy ingredients. Here's what I did different. I grated about 5 or 6 baby carrots into the mix and chopped one bunch of green onion (I needed to use up these ingredients). I also had many slices of colby jack cheese so I cut those into squares and folded that into the mix. I didn't have any spilling out all over the place, but there were still "gooey" cheesy spots! Lastly, I mixed almost equal parts ketchup, worcestershire, and a reliable bottled bbq sauce to spread on top. My only complaint about this was I wanted more. Instead of a thin layer on top, I would have liked this taste to be throughout the meatloaf. I may try just adding more glaze on top next time or maybe serve a side of the sauce.
