Radishes Simmered with Thyme

In my quest to shake up the veggies in my life, I stumbled across this recipe. It's very delicious and makes a colorful plate. My radishes did take much longer to cook than the recipe said. I think next time I will slice them in half.

Cajun Dirty Rice

I substituted ground turkey for the beef and left out the sausage completely. This made just the right balance of meat and rice. I added lots of spices, as I eat my food very hot. This makes about 4 quarts, so I'll have leftovers for quite a while. No complaints here!

Cake Mix Cookies VIII

Yum, yum, yum! This recipe makes really delicious and perfectly round cookies. I added 2 T oil and 1 tsp vanilla as others suggested. I'm looking forward to trying different cake mixes, soon.

Layered Chicken and Black Bean Enchilada Casserole

Yummm... this was really excellent. I was hoping for leftovers, but everyone went back for seconds. I slow cooked the chicken in taco seasoning in the crock pot, then pulled it for better texture in the casserole. Delicious!

Herbed Green Bean Casserole

This is a family favorite at the holidays. It's not a very pretty dish, but it sure is delicious. I always cut back the salt because the cheese has a good bit of sodium and it can be quite overwhelming.

Chicken Avocado Pizza

This turned out delicious, but I did some tweaking. I crushed two cloves of garlic and mixed it in with the avocado, sprinkled some taco seasoning on top, and added some mushrooms. Any veggies could be used for this. I slow cooked and pulled the chicken before putting it on the pizza to keep it from drying out. I will definitely make this again!

Enchilada Stuffed Shells

A nice change of pace from a usual dinner. I added green chilis and extra enchilada sauce, as well as taco seasoning to the meat. (Try Taco Seasoning I by Bill Echols. It's great.) The only thing I might do differently next time is drizzling enchilada sauce on top before baking. The shells need some more moisture to withstand reheating.

Flounder with Shrimp Sauce

Excellent and economical, with a beautiful presentation. I wrapped some cheese in with the shrimp, which was a nice touch. I was very impressed with the sauce, which I will probably make to serve over chicken or vegetables in the future, as well.

Pumpkin Turkey Chili

A real winner! When I was making this recipe, I was worried that there was going to be way too much pumpkin in it, but it was wonderful! I added red pepper, oregano, and some extra chili powder for extra flavor. It was on the thick side, so I added some water as well. Great for a student budget -- I will definitely make this again! Thanks for sharing!
