I am self employed and have the luxury of working at home, while raising my 15 month old daughter. I love finding new dishes that she and my husband will enjoy.
My favorite things to cook
Don't get me wrong, I LOVE fattening, savory dishes. The problem is that my butt and thighs don't agree. I busted my butt (literally) to get the baby weight (and then some) off of me and now I have to maintain by eating healthy, low cal, lower fat, high fiber meals during the week. I tend to indulge in my savory dishes on the weekends!
My favorite family cooking traditions
My mom rarely cooked when I was growing up. She had a handful of meals that she'd put together but they weren't anything special.....except for one. Her "creamed eggs on toast". The best breakfast ever! That breakfast alone, made me want to cook on a more regular basis, so that my daughter could enjoy growing up with some yummy dishes.
My cooking triumphs
So far, I'm really great at COOKING, but haven't developed many of my own recipes. I've only got a handful that I've created, but I get compliments on them all the time.
My cooking tragedies
My first attempt at my mom's "creamed eggs on toast". I mistakenly used garlic powder instead of onion powder. HUGE mistake.

Corn Casserole II
This is BY FAR the best corn casserole recipe on this site...or anywhere! My family begs me to make it for every holiday. Not only is it ridiculously quick and easy but it tastes unbelievable. My only comment is to beware of the type of jalepenos used. The amount called for in the recipe is perfect if you use the mild pickled jalepenos in a jar. If you use regular canned jalepenos you are in for some serious heat!

Creamed Hard Boiled Eggs
I'm amazed to see this recipe online! My mother made this for family breakfasts my entire life....and I love it! We serve the eggs over wheat toast and it's just delicious. Also, you might want to try omitting the cheese and flavoring the sauce with onion powder. It's killer!
