About this Cook
I'm a newlywed and college student, so sometimes time is not on my side for cooking. But I enjoy it so much, I try to make time, even when I'm by myself.
My favorite things to cook
Fajitas, chicken, tilapia, salmon, and all kinds of dessert.
My cooking triumphs
My husband and I catered our own wedding. However, I got sick right before and ended up only making the truffles. So my husband miraculously cooked the rest of the food: 4 lasagnas, 4 pizzas, and a ton of spaghetti sauce. All of our guests loved the food.
My cooking tragedies
Once I tried to make a sponge cake and didn't 'fold' the mix well enough so that when it was done, there was a hard clump of powder right in the middle!

Amy's Cilantro Cream Sauce
This is reeaaalllly good. I use it with the Southwestern Egg Roll recipe as another reviewer suggested. I have never used a full 7 oz. of tomatillo salsa...the kind I got was super hot as it was so I ended up just using 3 tablespoons, maybe 4. I also add a little minced garlic in place of part of the garlic powder. Just 'cause I love a stronger garlic taste.

Southwestern Egg Rolls
I have made this things several times now and everybody always loves them (including me). I usually just use what's on hand. Canned chicken works fine and is quicker. I have been omitting the spinach since it's not much and couldn't really taste it anyway; Pepper Jack instead of Monterey; and baking instead of deep frying. Still turn out great!

Broccoli Beef I
this was pretty darn delicious. I didn't realized we were out of soy sauce, so used Worcestershire sauce instead. I used 2 cloves of minced garlic, added 1/2 tsp red pepper flakes (we like spice), doubled the broth, and added onions. Very good. Would be great over rice, but we ate it alone to cut down the carbs. Still very filling.
