Loved this one, as did the rest of the family. Excellent. Didn't have any water chestnuts and I used peas instead. Followed the rest of the recipe as printed.

Simple Whole Roasted Chicken

This was so easy and so good. Came out nice an moist. Although I did eventually turn it breast side up so it would brown as well. Will always roast a chicken this way now.

Mixed Vegetable Casserole

Very tasty. I did use 1/2 cup low fat mayo and 1/2 cup low fat sour cream in place of 1 cup mayo. Also used frozen mixed veggies (didn't have canned). Very creamy, will make again.
