Enchiladas Suisas

Reviewed: Dec. 13, 2009
I'm not giving this 5 stars because any recipe that ends up being another excuse to eat a lot of cheese and chicken without being called cheese and chicken (as if the guilt would go away!) doesn't deserve 5 stars. Does this recipe taste good? YES! Do my kids it? YES! Was it hard to make? Not really. Was it company-worthy? Probably. Now, I need to find a recipe that combines lima beans, eggplant, brussel sprouts and cottage cheese in a tasty way, and I'll give that 50 stars!

There's so much to love about this recipe. It's a lot of work, though. And it makes a lot of bad-for-you food, so I guess that's not to love. But I'm staring at the leftovers and waiting for my tummy not to feel full so I can have more. So good.

Flavor was just so-so. It was the first time the kids, who will eat anything with carbs, were disappointed when I made their PB&Js with it.

Great recipe. I'm so excited not to buy Nature Valley, now! I reduced the sugar and highly recommend it. There's so much honey in it to sweeten it sufficiently. I like the many possibilities for variations on this recipe. I look forward to another go at it, next time for a crunchier batch.

Great flavor, just go easy on the salt. I used about 75% of what the recipe said and it was just beyond my comfort zone. Everything else was really good. I, too, was impressed with the oranges. I wouldn't have thought to add those but they really worked.

Plum Clafouti

Reviewed: Sep. 3, 2009
I think mine wasn't done quite enough. I gave it 50 minutes (at least) in the convection oven. Maybe I did something wrong along the way. It tasted great and the bottom was a really good pasty crust, but the whole thing didn't hold together too well. I used greengage plums which might be sweeter than the italian variety, so it was sweet enough without adding more sugar. I'd never heard of clafouti (nor had my dinner guests), so it was a little scary making it the first time, but it's worth it to try it again, since we have an abundance of plums this time of year.

I left some of the pretzels in bigger chunks. I don't recommend it. I think I would have liked the crust better if they were all nearly a powder. The chunks turn out chewy. Otherwise it's a yummy dessert worth trying again sometime.

Good but not great. I prefer chewy cookies with a little more flavor. Not sure what this recipe needs, but if I need a chocolate cookie fix, this would probably do the trick.

Baked French Fries II

I loathe deep-fat frying. These fries weren't highest restaurant quality (d@#^ Good Fries from East Coast Grill in Cambridge or Fat Boys fries to name a couple) but they satisfied us at home without the cost, mess, or travel. This is definitely the way to go to get home cooked yummy fries with endless possibilities in the spice-it-up department.

Russian Mushroom and Potato Soup

Reviewed: Mar. 15, 2009
Yummmy! Our boys (3 and 6) ate their whole bowl and asked for it for another meal. Really good. Everyone liked a different aspect best. The dill did if for me, although, not nearly as potent as I thought it would, when I saw how much went in the soup. We used some broth that we had made a few weeks ago and so the salt wasn't at all too much. Highly recommend it.

Meat Loaf Pie

Reviewed: Oct. 15, 2008
Too sweet, oddly sweet. The corn and the catsup, probably the main culprits. And the pie crust, maybe. My crust wasn't cooked beforehand, so it wasn't the right consistency. I usually like one-dish wonders, but I won't make this one again. Lose the corn and the pie crust, and spice up the meat seasonings, and use julienned zucchini and squash, perhaps, for starters, but then that'd be a totally different dish...

Chocolate Pecan Pie III

Yumm! Mine totally rose out of the crust and fell over. But it was still delish. I used bittersweet chocolate instead of cocoa powder. Don't know if that was the culprit or not. Don't care. I had to exercise restraint to not just give everyone a fork and just eat the whole thing together right out of the pan.

Oatmeal and Wheat Flour Blueberry Pancakes

Reviewed: Aug. 29, 2008
I really liked these, given that I added cinnamon and vanilla. They aren't too sweet. But my kids ate them without syrup and said I should definitely make them again. After they had finished, I tried mine with syrup and beware! These pancakes soak up a lot of syrup! So, I think they actually do better without or maybe with very little syrup. This recipe made about sixteen 5" pancakes.
