Black Bean and Salsa Soup
Wow - really quick and delicious! I only blended half of the black beans, because I like a little more texture in soup; I also ended up adding half a can of refried beans because I tend to like thicker soup than this made - I thought it was a bit thin. I used chicken stock because it's what I had on hand, and added a little lemon juice and cilantro at the end to give it a little more kick.
