Campbell's Skillet Chicken Parmesan

This was the first time I'd ever tried to make chicken parmesan, and I loved this recipe. Simple, and it turned out really well! Took me more like 45 minutes than 25 though; the chicken simply took longer to cook, but that may have been the size of the chicken breasts I used. I also made my own sauce rather than using Prego (basic canned tomato sauce plus Italian seasoning, minced garlic and a little onion powder and let it simmer for a while before starting the chicken). I served it over penne for lunch and it was so good I am now craving the leftovers! :)

Simple Spinach Lasagna

I just made it for the first time--the first lasagna I've ever made, actually--and it turned out GREAT. My husband even said it's the best lasagna he's ever had! I just did a few things different from the recipe: * doubled the oregano and basil * 6 oz bag of fresh baby spinach instead of the frozen spinach * a layer of ground turkey in the middle * cilantro instead of parsley I definitely recommend this recipe (with these changes :)).

Orange French Toast

I just had a craving for French toast but we were out of milk, so I came here to find a recipe using orange juice. My husband just made this with a few changes: He used some Southern Butter Pecan coffee creamer instead of half-and-half, whole wheat bread instead of cinnamon, omitted the orange peel and butter, and fried it instead of soak overnight and bake. It is DELICIOUS!! Best French toast I've ever had! And I'm sure the original version is delicious, too. :)

Decadent Pumpkin Muffins

These were pretty good. I did make the same substitutions others have suggested--half whole wheat flour, four whole eggs, no water--but they came out well and everyone from my 19-month-old niece to all the adults in our household really liked them. :) I also added more of the spices than is in the recipe. After making 1 dozen muffins, I added chocolate chips to the remaining batter and poured it into a 9x9 pan and baked for about 35 minutes. Voila: pumpkin chocolate chip cake! That was a hit also.

Singapore Noodles

Made this tonight and it was really good! I've been to Singapore a few times so I even had a basis for comparison. :) I made a number of substitutions based on what we had on hand and what's healthier: broccoli instead of bean sprouts, whole wheat instead of regular pasta, and we did shrimp plus ground turkey rather than the meats in the recipe. It turned out well; I ended up having to add a bit more water and soy sauce than the recipe called for. Overall though it's a tasty recipe, fairly quick to make, and we'll definitely make it again.

Chickpea Curry

My husband and I are big Indian food fans, so we had to try this. It was pretty easy to make, and tasted great. We doubled most of the spices though; the flavor of the original recipe was a little subtle for us. Delicious over basmati rice!

Spiced Baked Apples

I followed the suggestions in the reviews for the most part, and these turned out really well! I put brown sugar and butter in the center of each apple, and made the water, flour (we didn't have cornstarch), chopped nuts and spices mixture to set the apples in while baking. Also did the foil for 20 minutes, then remove the foil for the last 10 minutes suggestion. These were DELICIOUS served with vanilla ice cream! My husband and I really enjoyed them.

Healthy Turkey Loaf

Just made this for the first time, and my husband and I loved it! We did double the recipe, and made a few substitutions: - cracker crumbs instead of bread crumbs - tomato and onion tossed in the food processor instead of the salsa and bell peppers - Southwestern seasoning, red chili powder and mustard powder instead of lemon pepper It was delicious and since I recently started Weight Watchers, I was delighted that it's only 2 points per serving!
