Mary Anne's Carrot Cake

If you like carrot cake with "stuff" in it, then this recipe is for you. The pineapple, shredded carrot, and raisins make this cake more like a fruit cake. It's the best carrot cake recipe I've ever found, and it's easy. My 10-year-old daughter made it for my birthday. We used a standard round pan instead of a Bundt pan.

Easy Strata and Variations

This recipe was outstanding. I had never eaten strata before, so I wasn't sure what to expect. It was golden, fluffy, and delicious. We couldn't even tell it used to be white bread! I didn't have any mushrooms, so I just added leftover ham steak and scallions. It tasted perfect--I don't think I'll use mushrooms next time either.

Caramel Apple Pork Chops

My family thought the name of this recipe sounded gross. It really doesn't taste like a caramel apple (thank goodness), it's much better. I doubled the sauce like the other reviewers suggested.

Slow-Cooker Chicken Tortilla Soup

This recipe was excellent, even my kids liked it! I used cooked chicken, not because of personal preference, just because I had a lot left over (good to know that raw chicken works well too). I assembled the soup in a ziploc bag, then froze it for about two weeks. This soup is a great "freezer meal" because the ingredients hold up well. I defrosted the bag, then put in in the crock pot on high for 2 hours.

Quick and Easy Ham with Sweet Potatoes

My picky kids loved this meal! I made it, wrapped it in foil, and froze it(all except the marshmallows, because those are added later). I wasn't sure it would freeze well--I defrosted it, cooked it, and everything tasted fine. I used the prepackaged RAW ham steaks, and they did not dry out, they were perfect.

Pork Tenderloin

Great recipe! I made this recipe to freeze. Instead of rubbing the tenderloin with mustard and thyme, I just put them in the marinade. I added the raw pork tenderloin, then put the whole thing in a ziploc bag. I put the apple jelly sauce in a separate bag, then put both bags in the freezer. When I defrosted and prepared the meal, it turned out wonderful. The first night we had it with sesame noodles; the second night we had pork tenderloin sandwiches with dijon mustard and cranberry chutney.

Shredded Beef Chimichangas

WOW! This was so good my family fought over who got to take the leftovers for lunch tomorrow. I took the easy road and dumped all of the ingredients into the crockpot, crocking it on low all day. I didn't melt the butter for the tortillas--instead I spread it on there and let it melt in the oven. I put cheese inside the chimichanga instead of the outside, and it worked out great. I will be making this again soon!

Salmon Rosemary Burgers

These turned out great! I used some leftover cooked salmon fillets and substituted a little dry onion soup mix for the onions (I was out). I didn't have any horseradish either, so I used extra Dijon mustard. Best way I've ever had salmon! I can't wait to try it with the horseradish and red onion.

Shredded Beef for Tacos

I was all set to make this recipe when I realized that I only had two of the ingredients--meat and white wine. I saw that another reviewer had used salsa in place of the hot tomato sauce. I had some green chile salsa on hand (it's not tomato based, but some brands have chopped tomatoes in them) so I used that instead. It turned out fabulous! The meat was so tender and flavorful. To help shredded beef retain its flavor and moisture, I pull apart the roast then place the shredded meat back in the crock pot. I let it marinate in the juices for at least 15 minutes before serving.

This recipe was okay. The chicken was very tender and moist, but the rest of it just wasn't that exciting. If I use the recipe again it will be for the chicken and pineapple by themselves.

Simple Slow Cooker Meatloaf

This is the best meatloaf ever! I didn't have any sausage, so I just used two pounds of ground beef. Make sure to taste the meatloaf before you add the top layer of ketchup.I ended up scraping it off because the meatloaf was so darn tasty that it didn't need ketchup! (The ketchup didn't enhance the overall flavor, it just covered it up.) My kids even asked for seconds!

Fish in Foil

This is a good basic recipe for trout. I cooked mine for 12 minutes, and it turned out fine. It's a little on the bland side, I think it might be better with fresh garlic instead of garlic salt.

Chicken with Asparagus and Roasted Red Peppers

Surprisingly good! I used a full can of chicken broth, 2 garlic cloves, and 2 teaspoons of basalmic vinegar. I had to drain the broth before I added the cheese. The only thing I'll do different next time is that I will not salt the chicken. The dish is pretty salty already.

Creamy Spiced Coleslaw

I substituted reduced fat mayo but otherwise followed the recipe. It turned out great! Be forewarned though, this coleslaw is not as sweet as other coleslaws. I served it with barbecue, and my husband and I felt like the coleslaw was not sweet enough to serve with spicy barbecue. I think it would go better with fish, fried chicken, or pork chops. It is still an excellent recipe though, and I plan to make it again.

Sarge's EZ Pulled Pork BBQ

My husband said this is better than the pulled pork at our local barbecue restaurant. I used a pork shoulder roast and cut the fat off it before cooking. Based on the other reviews, I increased the coffee to 1 cup, used one 10 oz. can of double strength beef broth, and 1 1/2 tsp. of liquid smoke. It turned out great, but next time I think I'll use a less fatty cut of meat. I removed most of the visible fat, but the meat was still very rich (too rich for me, but not for my hubby). I served it with Trader Joe's barbecue sauce, rolls, and creamy spiced coleslaw (from allrecipes).

Hamburger Soup III

This is a great recipe! I wasn't sure if the tomatoes were supposed to be drained or not. I drained them, and the soup turned out well. I'll be making this again.
