Spinach Quiche

Reviewed: Jul. 16, 2004
Absolutely delicious! And so easy! You really must make this...I have served it to people claiming to like neither spinach nor quiche....they went back for seconds on this one! Highly recommended, and easy to throw together last-minute. I keep the ingredients on hand in case unexpected visitors arrive. (I used 6 eggs instead of 4). Thanks for the recipe!

This soup is wonderful, especially if you love Stilton, as I do! It was quite an easy recipe as well....I pureed the soup with my immersion blender. Yum!

Thank you so much for this fun and delicious recipe! (I doubled the cookie recipe.) The cookies themselves are divine, I got many compliments on the taste of the cookie. Of course the children loved the looks of everything. We had no problem using the straw, etc. What a fun activity!

Roasted Red Pepper and Tomato Soup

Reviewed: Jun. 2, 2003
Very good recipe. I took some liberties as I was short on time, and still had a great result. I used a large jar of purchased roasted red peppers. I also used a large can of diced tomatoes, and veggie broth instead of chicken broth. I ended up with all the ingredients simmering away in the pot and then used my immersion blender to puree everything right in the pot. Excellent flavor and seasonings. I also added some dry mashed potato flakes to thicken it up at the end instead of the butter/flour. Thanks for a great recipe!

Butter Bean Burgers

Reviewed: Apr. 25, 2003
Very delicious! Thanks for the recipe, everyone in the family ate them. The only thing I did diffrently from the recipe was bake them in the oven on my baking stone at 425 degrees. Then I turned on the broiler for the last few minutes. I added some dill weed to the bean mixture before baking. I made this the same night I made the Mexican Bean Burgers, which were excellent as well. We could sample both. (Mexican Bean burger recipe in this collection, below). Thanks for a good recipe.

Baked Dijon Salmon

This really is very delicous. My husband and four year old daughter loved it. I wouldn't change a thing. Saving a little extra of the sauce for dipping is a good idea. Excellent recipe for fish, thank you!

Poppy Seed Cake III

Not only was this cake delicious and easy to make, it kept very well in the refrigerator. It was a definite hit with everyone, including my father who loves poppy-seed cake, and my three year old. I also added lemon zest. This is a wonderful recipe, easy to whip up and fun!
