This was a great recipe! I used shredded potatoes instead of flakes to match my cooking style better, and took the advice from other reviewers and added some fresh minced celery and a splash of lemon. Next time I might blanch the shredded potatoes a bit first to lose some starchiness - and will have to find some sort of chipotle sauce to go along!

Cream of Pumpkin Soup

I made this for a Pumpkin themed birthday party, and it was a hit! It did turn out a bit thick side, so I might use more stock, or half and half instead of heavy cream next time - but it was still fantastic. Also I added some fresh ground nutmeg since I felt like it was missing a little something, and it was the perfect touch. The cinnamon croutons were the perfect touch, and was a snack hit on their own! Thanks for the recipe :)

Orzo Delicioso

This is a great base recipe that welcomes different additions. This time I substituted Italian Chicken Sausage for the jalapeños (2 part hot 1 part sweet) and a can of chopped tomatoes with green chiles since I didn't have any fresh tomatoes in the house. Left out the mushrooms since I don't care for them, and used whole wheat orzo. It came out great - quite spicy actually, less hot italian sausages next time! Thanks for the recipe!
