Sweet Potato Potato Salad

WOW, this was fantastic and that is not a comment I throw around lightly. The only thought I have is to watch the sweet potato closely while they're cooking. My big old sweet tater was done about ten minutes before the white ones and I had to fish it out of the water to keep it from getting mushy. Wonderful recipe, thanks for sharing!

Quick and Easy Grilled Potatoes

Really simple and delicious. Watch them so they don't scorch and they'll be great. Play around with different seasoning blends too.

Grilled Brown Sugar Pork Chops

OH YEAH SKIPPY! We've got a keeper here. This sauce is so good, great flavors but nothing overpowers anything else. I'm going to try it on chicken very soon. The recipe is great as written. A couple of suggestions you might want to try: marinate in a mixture of soy sauce and bourbon in the fridge for a few hours and then pat dry and rub with kosher salt and coarse black pepper. And the water, use bourbon instead. It evaporates quickly and leaves it's flavor in the thickened sauce. Also, don't wait too long to begin basting or it won't candy up on the chops. Grilled Asparagus

So simple and sooooo delicious! It's wonderful just like it's listed. And as many others have suggested, it's also super good if you tweak the flavor a bit with an olive oil and balsamic vinegar marinade. I wouldn't salt until ready to grill because I think it toughens the asparagus just a bit if put in the marinade. I HIGHLY recommend using a grill basket if you're "tong challenged" like me.

Grilled Salmon I

This is a great simple recipe for salmon. I think salmon tastes great on it's own so getting too fancy runs the risk of ruining it. I've got to say, you folks who are wrapping your fish in a little foil pouch, be brave, put it on the grill, directly on the grill, a charcoal grill. If you're going to trap it in foil why bother lighting a grill at all? GRILL it ON the grill, it's so delicious!

Waffles I

Very good basic waffle recipe. I would recommend more salt for my taste but other than that it was really good. Next time I'll try beating the egg whites separate to fold in last as others suggest. A good waffle iron makes a real difference. Try this recipe as written, then play with it to make it your own. You'll love it.

My Mother-in-Law's Cheese Sauce...ssshh Don't Tell Her

Very simple and very good. I used Velveeta instead of American cheese slices (AmCh slices vary a lot in content and moisture and are not reliable in recipes). I found it to be tasty and a good consistency. And folks, if you think it's not thick enough for you.....add more cheese.

Asparagus and Smoked Salmon Salad

Mmmmmmmmmm boy! It's a keeper and so quick. Everybody loved it and it's great just as prescribed. After a 2 to 1 vote, the peas were omitted and not particularly missed. And I couldn't resist the urge to add a smidge of Tennessee mountain sourwood honey in the dressing. Something else we tried, sprinkle some cranberries or Craisins on it.

Awesome Slow Cooker Pot Roast

How could something so simple be so bloomin' tasty? I too used a chuck roast and floured and browned it a little before tossing it in the crock pot, though I don't know that it's really necessary. I don't see an issue with the gravy being thin in fact I added just a tiny bit of liquid to mine. A minor enhancement you might want to include is some cracked black pepper, a couple of quartered onions, and a handful of mushrooms. Or....just make it exactly like the recipe. Still awesome.

Banana Pancakes I

Really, really good. Everybody liked them. I made mine with whole wheat flour to give some nice texture but it needs a pinch more baking powder that way. And as some suggested, I added 1/2 tsp vanilla extract, toasted walnuts, and only used one pretty good sized banana instead of two. Next time I'm going to sub apple sauce for the oil, which works really well in other things.

Roasted Vegetables

Oh wow! This is so incredibly easy and equally delicious. The aroma in the house while this was baking was almost more than we could stand. It goes great along side of roasted pork or chicken. Don't change a thing, it's perfect. Where I live fresh herbs are not readily available so use dried herbs and cut the quantity in half.

Honey-Spice Acorn Squash

Oh my heavens, that's tasty! Didn't change a thing and it was perfect. I prepped them the night before and when I got home from work just shoved them in the oven to bake. Served it with a chicken & dressing casserole.

Fish Fillets Italiano

Mmmmmmmmmm! Even my son who doesn't eat onions, olives, or mushrooms cleaned it up. I kept really close to the recipe but used the Tilapia I had on hand. Also, put in some sliced baby port mushrooms with the onions. Seasoned it up a bit kosher salt, black pepper, extra garlic, and basil. After adding the tomatoes, be sure to cook the sauce mixture down until it's no longer watery for a good consitency as some canned tomatoes have a higher liquid content. Without a doubt, one of my new favorites. Thanks!
