This was ok. It was kind of on the bland side. I wonder if you let the chicken soak in the butter/oil/spice mixture overnight if that would help. I might try again that way.

Pumpkin Cheesecake II

As per other reviewers suggestions, I added 1/4 cup more pumpkin since everyone here loves pumpkin pie. Mine did crack though so I made the pecan glaze as suggested. It turned out very well-everyone gobbled it up w/o ever knowing it cracked! :)

I had all of these ingredients in my fridge except the carrots so I made this recipe without them. It turned out wonderfully! I will definitely make again-next time with the carrots!

Louisiana Sweet Potato Pancakes

These weren't as hard as some of the reviews made them sound. Making them with two tablespoons full of dough was the way to go. Any bigger and they were doughy in the middle at the end. My only complaint was that they weren't sweet potato tasting enough for me. Maybe I just needed sweeter potatoes? I will definitely make these again though.

Eggplant Parmesan II

I usually love eggplant parmesan but this didn't trun out quite like I had hoped. It was almost too rich maybe, it's hard to put my finger on exactly what was off. I don't think i'll be trying this recipe again.

Shrimp and Crab Enchiladas

I've made this a couple times now and I have one pointer- make sure you get quality crab meat! The first time I made this it came out fantastic, the next time way too crabby/fishy tasting. I tried once more making sure I used dungeness crab meat and it was excellent once again. YUM!

Chicken Cordon Bleu II

This was excellent! Based on other reviews I also added garlic to the wine and boullion mix and basil to the cream sauce. I also used bread crumbs instead of flour and added some parmesan cheese to the crumb mixture before coating the chicken. It was delicious! We will definitely make this one again.

Lemon-Garlic Green Beans

This was pretty good, although not as much flavor as I had expected. I'll probably make it again with more spice. I also tossed in a little water towards the end of cooking-maybe 1/8 cup-to soften up the beans just a bit.

Garlicky Baked Butternut Squash

I didn't peel this. The skin got soft enough baking to save the time it would have taken to peel it. It came out really well. My boyfriend and I ate it up :) yum!

Spinach Stuffed Chicken Breasts

This really didn't turn out nearly as good as it sounded. The spinach flavor was much too strong for me even though I like spinach. It just overpowered everything else. I might try this with fresh baby spinach instead of the canned.
